to be honest, i am not a huge fan of creamy spread recipe and i personally like something spicy and savoury dips and spreads. well that’s my personal preference and there are thousands of them who like creamy spread and one popular choice is cream cheese spread recipe. there are many ways to make it, but this recipe is a desi or indian style. it is made with chenna or paneer with hint of spices and herbs in it. in western countries, it is made with curdled milk and full cream but for the indian taste buds, i choose fresh paneer and grounded to a smooth and silky paste along with cream and milk. to this, i added a small portion of full cream milk which gives the perfect taste and texture. well, this is not mandatory but i would add it for a perfectly creamy texture and taste.

furthermore, i would like to add some more additional tips, suggestions and variations to cream cheese spread recipe. firstly, the milk is a key ingredient for this recipe and it has to be full cream milk. do not compromise on it and particularly avoid skim milk as you may not get the same thick and creamy paneer or chenna. secondly, if you feel preparing paneer at home is too much of work, you may use store-bought too. this may not get the same fresh result if you use stale or old paneer. hence make sure you get some fresh one. lastly, the topping for this recipe is open-ended. i have added mixed herbs for the flavour, but you may also add chilli flakes and pepper too. in addition, you may also add garlic and ginger for additional taste and flavour.

Ingredients
  

  • 2 litre milk
  • 3 tbsp vinegar
  • ½ cup cream
  • ¼ tsp salt
  • ½ tsp mixed herbs

Instructions
 

  • firstly, in a large vessel take 2 litre milk, stir and get the milk to boil.
  • once the milk is about to boil, add 2 tbsp vinegar.
  • stir until the milk curdles.
  • add another tbsp of vinegar, to make sure the water separates from the milk.
  • drain off the curdled milk into cheesecloth and squeeze well.
  • rinse with cold water making sure to get rid of all sourness.
  • now squeeze off gently. do not over squeeze as the moisture will be lost.
  • transfer the paneer into the blender.
  • add ½ cup cream, ¼ tsp salt and ½ tsp mixed herbs.
  • blend to smooth paste.
  • if the mixture is dry and crumbly, then and 2 tbsp milk and blend.
  • blend to a silky creamy smooth consistency.
  • finally, enjoy cream cheese recipe with bread or to prepare the sandwich.
