i have posted several rice recipes till now, but this recipe of ghee rice recipe is the easiest and flavoured recipe. as matter of fact, it can be done in 2 ways. the most common way is to saute the non-cooked rice with ghee and onion and boil it till it gets cooked. i prefer this way of making ghee rice, but the other option is also quite popular, the second most popular way is to stir fry the leftover cooked rice with ghee. this recipe is very similar to indo chinese fried rice but just that cooked with homemade desi ghee. it is ideal if you want to finish any unused overnight or leftover rice. i make it this way, to prepare my husband’s lunch box and share it with any leftover curries.

some easy and important variations, tips and suggestions for a perfect ghee rice recipe. firstly, i would heavily recommend using basmati rice for this recipe instead of sona masuri and any other edible rice. basmati rice would yield non sticky long grain which makes it ideal when serving for the feast. secondly, the recipe tastes great when served with kurma or any coconut based spicy curry. but you can also be served with any spicy dal based curries too. lastly, the recipe can be further extended by adding grated coconut or perhaps frozen vegetables. you can experiment it with green peas, sweet corn, finely chopped beans and broccoli.

Ingredients
  

  • 1 tbsp ghee / clarified butter
  • 8 cashew, halves
  • 2 tbsp raisins
  • 1 bay leaf / tej patta
  • 1 inch cinnamon
  • 2 pods cardamom / elachi
  • 5 cloves
  • ½ tsp pepper
  • ½ onion, sliced
  • 1 chilli, slit
  • 1 cup basmati rice, soaked
  • 2 cup water
  • 1 tsp  lemon juice
  • 1 tsp salt

Instructions
 

  • firstly, in a large kadai heat 1 tbsp ghee and roast 8 cashew and 2 tbsp raisins.
  • roast the cashew to golden brown and keep aside.
  • now in the same kadai saute 1 bay leaf, 1 inch cinnamon, 2 pods cardamom, 5 cloves and ½ tsp pepper.
  • also, add ½ onion, 1 chilli and saute until the onions turn golden brown.
  • now add 1 cup basmati rice (soaked 20 minutes) and roast for 1 minute without breaking rice grains.
  • further, add 2 cup water, 1 tsp lemon juice and 1 tsp salt.
  • stir well and get the water to a boil.
  • cover and simmer for 20 minutes or pressure cook for 2 whistles.
  • after 20 minutes, fluff the rice gently without breaking rice grains.
  • add fried nuts and mix well.
  • finally, enjoy ghee rice with kurma.

notes:

  • firstly, use good quality basmati rice for long grain rice.
  • also, use fresh homemade ghee for rich flavoured rice.
  • additionally, pressure cook for 2 whistles if you want to cook in cooker.
  • finally, ghee rice recipe tastes great when served hot.
