Okra recipes are always my favorite recipes, and I try to prepare a mix and match several different cuisines. Recently I posted the Kurkuri bhindi recipe which is a deep-fried recipe. But I wanted to post a healthier version of bhindi recipe with less oil and yet not compromising on the taste. The Bharwa bhindi recipe or stuffed bhindi recipe is one such recipe that is stuffed with spices and stir-fried. I have prepared this recipe without any gravy, but this can also be prepared with tomato onion gravy. The stuffed vegetable sabzi is always best when served it is dry. Do try this and I am certain that it would be appreciated by your friends and family.
Even though the stuffed okra fry recipe is a simple curry recipe, but some important tips to make it perfect. Firstly, use or buy a tender and small okra or bhindi, as it tastes great and cooks faster. Remove the large seeds of bhindi before stuffing them into okra. These seeds make bhindi sticky and do not add any value to the taste. Secondly, I have cut the okra at the center into two pieces. alternatively, you can stuff the entire lady finger and then fry. Lastly, do not add or sprinkle water while the bhindis are stir-fried. If you feel, the okra’s sticking to the pan, you may add some oil for greasing. Adding water or moisture may end up releasing the sticky latex from okra’s

About Bharwa Bhindi
It is a simple and easy dry sabzi recipe that can be a perfect side dish for most Indian flatbreads. Traditionally, the Bharwa Bhindi recipe was just followed in the remote dry areas of North India. However, due to its taste and simplicity, it has been widely appreciated across India. Compared to the other gravy-based okra recipes, this dry recipe of okra does not pose the risk of releasing sticky latex. Hence it is one of the popular dry curries for beginners or novice cooks.
There are different variations to this simple Stuffed Okra or Bharwa Bhindi Sabzi. The variations mainly depend upon the type of stuffing that is prepared. The most common stuffing used is a mixture of besan and basic dry spice mixes. This spice mixed stuffing is the most popular stuffing which is also multipurpose and can be used with other veggies. The other common stuffing is with peanuts and dry coconuts. This can be dense, but super tasty.

Ingredients
!for stuffing:
- 2 tbsp peanuts
- 2 tsp fennel
- 2 tsp cumin
- 2 tsp coriander seeds
- 2 tbsp sesame
- 1 tbsp chilli powder
- ½ tsp turmeric
- 1 tsp aamchur
- 1 tsp salt
- 3 cloves garlic
- 3 tbsp roasted besan
- 25 bhindi / okra
!for sabzi:
- 2 tbsp oil
- 1 tsp cumin
- pinch hing
- 2 tbsp kasuri methi, crushed
Instructions
- Firstly, in a pan dry roast 2 tbsp peanuts on low flame until they turn crunchy.
- Add 2 tsp fennel, 2 tsp cumin, 2 tsp coriander seeds and 2 tbsp sesame.
- Roast until the spices turn aromatic.
- Cool completely, and transfer to the mixer jar.
- Add 1 tbsp chilli powder, ½ tsp turmeric, 1 tsp aamchur, 1 tsp salt, 3 cloves garlic and 3 tbsp roasted besan.
- Grind to fine powder without adding water.
- Now cut the head and tail of bhindi and slit in the centre.
- Stuff the masala in bhindi and keep it aside.
- Now in a large pan heat 2 tbsp oil. Add 1 tsp cumin, pinch of hing and splutter the tempering.
- Add in stuffed bhindi and roast on medium flame.
- Now cover and cook on medium flame until the bhindi is cooked well.
- Stir and cook until the bhindi is cooked from all the sides.
- Add in leftover masala, 2 tbsp kasuri methi and mix well.
- Finally, enjoy Bharwa Bhindi with roti or steamed rice.

Notes
- Firstly, fry the bhindi with a generous amount of oil to prevent bhindi from turning sticky.
- Also, prepare the masala slightly spicy, or else the stuffing will not taste good.
- Additionally, adding besan gives a nutty flavour.
- Finally, Bhara Bhindi Recipe tastes great when served hot and prepared with small bhindi.

Hello ridhima, i think you should be fine preparing it with frozen if they are not cut frozen bhindi. also defrost them before silting them,
