i always wanted to prepare and share a biscuit pudding recipe as i personally like the texture and consistency of it. but most of the pudding recipes contain gelatin or egg for the creamy texture or for setting it up. i was constantly trying by mix and match, but i could not achieve just with chocolate and biscuit. hence i thought of combining the custard and chocolate ganache. to be honest, i have used the same chocolate ganache which i used for my previous eggless chocolate mirror cake. i realised i can use it for this pudding as it easily thickens yet not losing the creamy texture. moreover, we all know the custard or the cornflour in the custard powder helps to thicken and forms a gelly texture. hence the combination of biscuit powder at the bottom, creamy custard in the middle and chocolate sauce at the top makes an ideal biscuit pudding recipe.
furthermore, i would also like to add some more additional tips, suggestions and variations to the chocolate biscuit pudding recipe. firstly, the use of biscuits is not just limited to parle-g and you can use any type of biscuits. perhaps, oreo or marie biscuits are the best alternative to the parle-g. secondly, i have prepared a plain flavoured custard mixture by adding full cream milk to it. you may experiment it by adding other flavours too. you may add cocoa powder, vanilla essence or even mixed fruits to make it colourful. lastly, you have to chilli it to get the best texture out of it. especially the custard thickens and forms a creamy texture when chilled.

Ingredients
for biscuit crumbs:
- 200 grams parleg biscuit / any digestive biscuit
- 2 tbsp cocoa powder
- 1 tsp vanilla extract
- 3 tbsp butter, melted
for eggless custard:
- 3 cup milk
- ¼ cup custard powder
- ¼ cup sugar
for chocolate ganache:
- 200 grams chocolate chips
- 100 grams thickened cream
Instructions
how to make parleg biscuit crumbs:
- firstly, in a mixi take 200 grams parleg biscuit and blend to a fine powder.
- blend to a fine powder by pulsing. you can use biscuit of your choice.
- transfer the biscuit powder to a large bowl.
- add 2 tbsp cocoa powder, 1 tsp vanilla extract and 3 tbsp butter.
- mix well making sure everything is well combined.
- form a crumbly mud-like texture. biscuit crumbs are ready, keep aside.
how to make the eggless custard:
- in a large kadai take 3 cup milk and ¼ cup custard powder.
- mix well making sure there are no lumps.
- once the custard powder is well combined add ¼ cup sugar.
- continue to cook until the mixture starts to thicken.
- the mixture must turn to a smooth silky texture. eggless custard is ready.
assembling the pudding:
- firstly, in a small cup take 2 tbsp of biscuit crumbs.
- using a small glass or spoon press tight making sure there are no gaps.
- pour in prepared custard to ¾ of the cup.
- cover and refrigerate for 30 minutes or until the custard sets.
how to make chocolate ganache:
- firstly, in a small bowl take 200 grams chocolate chips and pour 100 grams hot thickened cream.
- mix well until the chocolate melts completely.
- the mixture has to turn silky smooth consistency. if there are bits of chocolate you can melt using the microwave or using double boiler method.
- chocolate ganache is ready. cool it slightly.

- after the custard layer has set, pour the ganache over it.
- refrigerate for at least 30 minutes before serving.
