street food recipes have always been one of the popular requests i have been getting from my readers. i typically get a request for some spicy and lip-smacking recipes. i have been following these requests religiously, but this time, i thought of sharing something different. falooda recipes have always been one of the popular street food, especially after a spicy and savoury meal. i have already shared the sevai based one, hence i thought of sharing the same recipe with a twist. thin sevai can be difficult to find, but sabudana or sago is easily available in most of the kitchen. hence i thought of sharing the same falooda with sabudana as a replacement to thin sevai. i personally like the soft and spongy texture of sago pearls, and when mixed with rose milk, the entire experience doubles.

furthermore, i would like to add some tips, suggestions, and variations to sago royal falooda. firstly, in this recipe, i have added vegetarian gelly made without gelatin and hence making a vegetarian dessert. however, if you find it difficult to find it, you may entirely skip it. secondly, in this recipe, i have not added any fresh tropical fruit and i have limited to dry fruits. you may add fruits like banana, apple, orange, watermelon, grapes or as per your choice. lastly, the ingredients for this recipe like rose milk, boiled sago pearls can be prepared well ahead in advance. assemble the dessert drink whenever it is required as it tastes better when it is freshly stacked.

Ingredients
  

for sago pearls:

  • 4 cup water, for boiling & rinsing
  • ½ cup sabudana / sago

for rose milk:

  • 3 cup milk
  • 2 tbsp rooh afza

for falooda (1 glass):

  • 1 tbsp rooh afza
  • 2 tbsp sabja / basil seeds
  • 2 tbsp strawberry jelly
  • 3 tbsp nuts, chopped
  • 3 tbsp tutti frutti
  • 1 scoop vanilla ice cream
  • 1 cherry

Instructions
 

sago pearls preparation:

  • firstly, in a large kadai take 4 cup water and add ½ cup sabudana.
  • stir and boil for 10 minutes stirring in between.
  • continue to boil until the sabudana turns translucent.
  • drain off the sabudana once it is cooked completely.
  • now rinse with cold water. this helps to rinse off excess starch and prevents from sticking.
  • sabudana pearls are ready. keep aside.

rose milk preparation:

  • firstly, in a large kadai take 3 cup milk.
  • stir and boil until the milk reduces slightly.
  • cool the milk completely. recommend chilling the milk as it gives a good flavour.
  • now add 2 tbsp 2 tbsp rooh afza and mix well.
  • finally, rose milk is ready. you can adjust the concentration of rooh afza to your choice.

sabudana falooda assembling:

  • take a tall glass, and add 1 tbsp rooh afza and 2 tbsp sabja.
  • now add 2 tbsp prepared sago pearls and 2 tbsp strawberry jelly.
  • further add 2 tbsp nuts and 2 tbsp tutti frutti.
  • pour in 1 cup chilled rose milk and stir gently.
  • further scoop in 1 scoop vanilla ice cream.
  • garnish with chopped nuts, tutti frutti and cherry.
  • finally, enjoy sabudana falooda or sago falooda with more rooh afza.
