while i am huge fan of any cheese sandwich recipes, i have a special place for bombay veg sandwich recipe. perhaps it is because of the simplicity of this sandwich recipe and the choice of vegetables used in this recipe, especially the boiled potatoes. i always cook and boil the potatoes with some salt, so that it absorbs sufficient amount of salt and tastes good added to sandwich. also, i make sure to thinly slice these boiled potatoes, otherwise you may taste these sandwich pale.

Ingredients (1 cup = 250 ML)
for bombay sandwich masala:
  • 1 tsp cumin seeds / jeera
  • 1 tsp fennel seeds
  • 2 tsp black pepper
  • ½ inch cinnamon stick
  • 1 tsp chaat masala
  • ¼ tsp salt
for bombay sandwich:
  • 3 sandwich bread slices white / wholemeal
  • 2 tsp green chutney
  • 2 tsp unsalted butter
  • 8 slices potato boiled and thinly sliced
  • 4 slices tomato thinly sliced
  • 4 slices cucumber thinly sliced
  • 1 tsp sandwich masala
  • 4 slices beetroot thinly sliced (canned / cooked beetroot)
  • 4 slices onion thinly sliced
  • 2 tsp tomato sauce for garnishing
Instructions
bombay sandwich recipe:
  1. firstly, take 3 bread slices and cut the edges of bread slices.
  2. furthermore, spread green chutney to one bread slice. and for the other 2 bread slices spread butter.
  3. then place 4 slices of boiled potatoes over green chutneybread slice.
  4. followed by, sprinkle generous amount of bombay sandwich masala.
  5. furthermore, place tomato slices and cucumber slices.
  6. then cover it with butter bread slice facing butter side downwards.
  7. after that, spread green chutney over the bread slice.
  8. furthermore, place beetroot slices.
  9. followed by onion slices.
  10. then again sprinkle generous amount of bombay sandwich masala.
  11. after that, place again boiled potato slices.
  12. cover with the final butter slice facing the butter side downwards.
  13. now, garnish with tomato sauce and poke the toothpick.
  14. furthermore, cut to 4 pieces.
  15. finally, serve bombay sandwich with masala chai.
