in this post, i have shown 2 ways of making a popular mumbai sandwich recipes. the first one is a no-cook or no grill sandwich made with different layers of sandwich bread. you may call it mumbai club sandwich with different types of the vegetable slice in it. particularly the use of boiled potatoes and beetroots makes it unique for this sandwich recipe. the other variation is the grilled version of the same sandwich with the same set of layering and vegetables in it. but there is slight variation by adding a cheese slice in each sandwich layer. this makes it special from the former sandwich variant. some even add grated cheese on top of grill sandwich which i have skipped in this recipe. if you prefer to, you may add cheddar cheese grate on top of the hot grill sandwich which would eventually melt to have a wonderful sandwich experience.

furthermore, i would add some more tips, suggestions and variation to the layered street food bombay sandwich recipe. firstly, do not attempt this recipe other than sandwich bread or white bread slices. it does not taste great when made with wheat bread, multi-grain bread as the veggies, masala does not gel it together. secondly, for the first variant, i have sliced the side of the bread before stacking up the veggies. this would make it near and pretties, but not a mandatory step. lastly, the veggies added in this recipe is the basic and a mandatory set of vegetables for the mumbai sandwich recipe. having said that, you may experiment further and add more veggies to it. for instance, you may use carrot, zucchini, lettuce and even fried eggplant.

Ingredients
  

for sandwich masala:

  • 2 tbsp cumin
  • 2 tbsp fennel / saunf
  • 2 tsp pepper
  • 2 inch cinnamon
  • 2 pods cardamom
  • 1 tsp chaat masala
  • 1 tsp aamchur
  • ½ tsp salt

for bombay sandwich:

  • 3 slice bread, white or brown
  • butter
  • green chutney
  • 1 potato, boiled & sliced
  • 1 tomato, sliced
  • 1 cucumber, sliced
  • 1 beetroot, boiled & sliced
  • onion, chopped
  • tomato sauce, for garnishing

for grilled bombay sandwich:

  • 3 slice bread, white or brown
  • butter
  • green chutney
  • 1 potato, boiled & sliced
  • 1 tomato, sliced
  • 1 cucumber, sliced
  • 2 slice cheese
  • 1 beetroot, boiled & sliced
  • onion, chopped

Instructions
 

sandwich masala preparation:

  • firstly, in a pan take 2 tbsp cumin, 2 tbsp fennel, 2 tsp pepper, 2 inch cinnamon, 2 pods cardamom.
  • roast on low flame until the spices turn aromatic.
  • cool completely and transfer to the mixi.
  • add 1 tsp chaat masala, 1 tsp aamchur and ½ tsp salt.
  • blend to a fine powder and sandwich masala is ready. keep aside.

bombay sandwich preparation:

  • firstly, take 3 slice bread, and trim the sides.
  • spread butter on 2 bread slice and green chutney on another.
  • on the green chutney slice, place boiled potato slices and sprinkle sandwich masala.
  • also, place tomato and cucumber slices.
  • further, sprinkle a generous amount of sandwich masala.
  • cover with buttered bread slice and spread green chutney on top.
  • now top with beetroot slice and chopped onion. also, sprinkle a generous amount of sandwich masala.
  • insert 4 toothpick leaving equal spaces and cut into pieces. toothpick helps to hold layers together.
  • finally, garnish with tomato sauce and enjoy bombay sandwich.

grilled bombay sandwich:

  • firstly, take 3 slice bread, and spread butter on 2 bread slice and green chutney on another.
  • on the green chutney slice, place boiled potato slices and sprinkle sandwich masala.
  • also, place tomato and cucumber slices.
  • further, sprinkle a generous amount of sandwich masala.
  • place a cheese slice and cover with buttered bread slice and spread green chutney on top.
  • now top with beetroot slice, chopped onion and a cheese slice. also, sprinkle a generous amount of sandwich masala.
