chilli potato recipe | aloo chilli recipe | potato chilli | aalu chilli with detailed photo and video recipe. a unique street food combination recipe prepared with deep-fried crisp potatoes with spicy chilli sauce. basically, a fusion recipe of crispy finger chips tossed in a spicy and tasty indo chinese chilli sauce. it can be one of the favourite party starters or even appetiser recipe which can also be served as sides to most of the indo chinese rice and noodles recipe.
manchurian or chill recipes have always been a popular street food recipes for all age group audiences. initially, it was made only with gobi, paneer and chicken from the meat-based option. however, there has been a lot of variants lately, but one ingredient has become everyone’s favourite. it has to be potatoes. well, there are myriad snacks using potato, but for some reason, it was not considered initially. there is no rocket science with the aloo’s. basically, you deep fry these potato wedges with spicy batter coating which makes it crispy and unique. once the potatoes are prepared, it follows the same procedure of preparing the chill sauce using, soy sauce, vinegar, tomato sauce and chilli sauce. these crispy aloo wedges are then tossed in high flame with the above spicy chilli sauce and served immediately.
furthermore, some more additional tips, suggestions and variants to the chilli potato recipe. firstly, the choice of potatoes can be critical for this recipe. i would heavily recommend using potatoes with less starch for a crisp wedge. you may use the same potatoes used to prepare chips, french fries or potato wedges. secondly, the same recipe can be made as a gravy based or dry version. i have prepared the dry version here, but to prepare the gravy adding more cornflour slurry to the sauce to extend it. you may have to add extra sauces and salt as per your extension. lastly, once the dish is prepared it has to be served immediately. there is no room for sogginess as the potatoes can absorb the sauce quickly.

for boiling:
- water
- 1 tsp salt
- 2 potato / aloo, wedge
for crispy aloo:
- ¼ tsp turmeric
- ½ tsp chilli powder
- ¼ tsp salt
- 2 tbsp maida
- 2 tbsp corn flour
- water, for batter
- oil, for frying
for sauce:
- 2 tbsp oil
- 3 clove garlic, sliced
- 1 inch ginger, chopped
- 2 tbsp spring onions, chopped
- ½ onion, petals
- ½ capsicum, chopped
- 2 tbsp tomato sauce
- 2 tbsp vinegar
- 2 tbsp soy sauce
- ¼ tsp chilli powder
- ¼ tsp salt
- ¼ tsp pepper powder
- 1 tsp corn flour
- ½ cup water
- 2 tbsp spring onion, chopped
Instructions
- firstly, in a large vessel take water and add 1 tsp salt.
- once the water comes to a boil, add 2 potato.
- boil for 2 minutes and drain off the potato.
- now add ¼ tsp turmeric, ½ tsp chilli powder and ¼ tsp salt.
- mix well making sure all the spices are well combined.
- further, add 2 tbsp maida, 2 tbsp cornflour and 2 tbsp water.
- mix well adding more water forming a smooth batter.
- now deep fry in hot oil, keeping the flame on medium.
- stir occasionally and fry until the aloo turns golden and crisp.
- drain off and keep aside.
- in a large wok, take 2 tbsp oil. stir fry 3 clove garlic, 1 inch ginger and 2 tbsp spring onions.
- add and stir fry ½ onion, ½ capsicum.
- now add 2 tbsp tomato sauce, 2 tbsp vinegar, 2 tbsp soy sauce, ¼ tsp chilli powder, ¼ tsp salt and ¼ tsp pepper powder.
- stir fry on high flame until the sauces are well combined.
- further, add ½ cup cornflour slurry. to prepare the slurry, mix 1 tsp cornflour in ½ cup water.
- cook until the slurry turns glossy.
- now add fried aloo, 2 tbsp spring onion and mix gently on high flame.
- finally, enjoy chilli potato recipe topped with roasted sesame.
