as i was explaining earlier, this recipe is an extended version of vegetable hakka noodles recipe. in other words, i have added the spices like garam masala, chilli powder and turmeric powder on top of soy sauce and vinegar. it has a strong resemblance to the indonesian mee goreng counterpart. i personally believe the indonesian cuisine is a fusion between indian and chinese cuisine. basically, the rice and noodles based recipes are tossed with both sauces and spices to produce goreng recipes. initially, i thought of preparing the mee goreng recipe with freshly grounded spices but settled down with basic indian masala recipe. using dry spices like cardamom and cinnamon can slow down the cooking process. whereas it’s better to use an easily available blend of spice powders and to prepare no-fuss yummy noodles recipe.

furthermore, i would like to add some more tips, suggestions and variations to the masala noodles recipe. firstly, the addition of chilli powder, garam masala and green chillies can make it spicy heat. hence you may skip green chillies or red chilli powder to reduce the heat. alternatively, you can add red chilli sauce to increase the spice heat. secondly, you may extend this recipe by making it as a soupy masala noodles recipe. you may prepare manchurian soup or hot and sour soup and the same veggies and noodles to it. lastly, adding veggies to this noodles recipe is open-ended and you may add as per your preference. however, ensure to slice it thinly in lengthwise and stir fry it at high flame.

Ingredients
  

for boiling noodles:

  • 2 litre water
  • 1 tsp oil
  • 1 tsp salt
  • 2 pack noodles

for noodles:

  • 2 tbsp oil
  • 2 inch ginger, julienne
  • 3 clove garlic, finely chopped
  • 1 chilli, slit
  • 2 tbsp spring onion, chopped
  • ½ onion, sliced
  • 1 carrot, julienne
  • 1 cup cabbage, shredded
  • 5 beans, chopped
  • ½ capsicum, thinly sliced
  • ½ tsp turmeric
  • ¾ tsp chilli powder
  • ½ tsp cumin powder
  • ½ tsp garam masala
  • ½ tsp salt
  • 2 tbsp tomato sauce
  • 2 tbsp vinegar
  • 2 tbsp soy sauce
  • ¼ tsp black pepper powder

Instructions
 

how to boil noodles:

  • firstly, in a large vessel take 2 litre water, 1 tsp oil and 1 tsp salt.
  • once the water comes to a boil, add 2 pack noodles.
  • boil for 3 minutes or until the noodles turn al dente.
  • drain off the water and rinse with cold water to stop the cooking process. keep aside.

masala noodles preparation:

  • firstly, in a large wok, heat 2 tbsp oil, saute 2 inch ginger, 3 clove garlic, 1 chilli and 2 tbsp spring onion.
  • now add ½ onion and stir fry on high flame.
  • add 1 carrot, 1 cup cabbage, 5 beans and ½ capsicum.
  • stir fry on high flame until the vegetables are cooked yet remain crunchy.
  • now ad ½ tsp turmeric, ¾ tsp chilli powder, ½ tsp cumin powder, ½ tsp garam masala and ½ tsp salt.
  • saute until the spices turn aromatic.
  • further add 2 tbsp tomato sauce, 2 tbsp vinegar, 2 tbsp soy sauce and ¼ tsp black pepper powder.
  • stir fry until the sauces are well combined.
  • add in boiled noodles and mix well making sure everything is well combined.
  • finally, add 2 tbsp spring onions and enjoy masala noodles.
