in this recipe post, i have shared 3 south indian recipes which are typically prepared for breakfast. in other words, i have shared simple, vegetable uttapam and idli which are mainly prepared with rice and urad dal batter. but in this recipe, i shared the same traditional recipe with a twist. basically, i have used chings schezwan chutney as a topping and a sauce on top of dosa and idli. in uttapam recipe, i have used it as chutney and mixed with finely chopped vegetables before topping it on top of dosa. similarly, the chutney can also be added to other breakfast recipes like appam or puttu and even paddu recipe too.
i would like to add some of the tips and variations for the chings schezwan chutney recipes. firstly, in this recipe post, i have used chings brand schezwan, but it can be prepared with your choice of schezwan sauce. i have already shared the schezwan chutney recipe, which you can follow if you need something organic. moreover, the sauce used in this recipe is of mild to medium spicy. hence, if you are using other brands, you may have to vary the quantity accordingly. further, with the idli, i have used idli with idli rava. this yields soft and firm idlis which eventually helps to retain the shape while sautéing with moist sauce. you can also use rice based idli, but have to take extra precautions while stir frying.

Ingredients
for schezwan dosa:
- 2 cup dosa batter
- 4 tsp schezwan chutney
- 2 tsp butter
- ½ onion, finely chopped
- 4 tbsp spring onion, chopped
for schezwan uttapam:
- 2 cup dosa batter
- 1 onion, finely chopped
- ½ capsicum, finely chopped
- 1 tomato, finely chopped
- few curry leaves, finely chopped
- 2 tbsp coriander, finely chopped
- 1 inch ginger, finely chopped
- 4 tsp schezwan chutney
- oil for roasting
for schezwan idli:
- 5 idli, leftover
- 3 tsp oil
- 2 clove garlic, finely chopped
- 1 chilli, slit
- 4 tbsp spring onion, chopped
- 2 tbsp onion, finely chopped
- 3 tbsp capsicum, chopped
- 4 tsp schezwan chutney
- ¼ tsp salt
Instructions
schezwan dosa recipe:
- firstly, heat dosa griddle and spread a ladleful of dosa batter.
- now add 1 tsp schezwan chutney and ½ tsp butter.
- mix and spread uniformly.
- also, sprinkle 2 tbsp onion and 1 tbsp spring onion.
- roast dosa to a golden brown.
- finally, serve schezwan dosa with coconut chutney and schezwan chutney.
schezwan uttapam recipe:
- now pour ladleful of dosa batter over a hot griddle and spread slightly thick.
- top with prepared uttapam toppings spreading uniformly.
- further sprinkle ½ tsp oil, cover and cook both sides.
- finally, serve schezwan uttapam with coconut chutney and schezwan chutney.
schezwan idli recipe:
- now heat 3 tsp oil and saute 2 clove garlic and 1 chilli.
- also saute 2 tbsp spring onion, 2 tbsp onion, tbsp capsicum on high flame.
- now add 4 tsp schezwan chutney, ¼ tsp salt and mix well.
- add in cubed idli pieces and mix gently coating sauce uniformly.
- finally, serve schezwan idli topped with spring onions.
how to make schezwan dosa, schezwan uttapam & schezwan idli:
schezwan dosa recipe:
- firstly, heat dosa griddle and spread a ladleful of dosa batter as thin as possible.
- now add 1 tsp schezwan chutney and ½ tsp butter.
- mix and spread uniformly.
- also, sprinkle 2 tbsp onion and 1 tbsp spring onion.
- roast dosa to a golden brown.
- finally, serve schezwan dosa with coconut chutney and schezwan chutney.
schezwan uttapam recipe:
- firstly prepare the topping by taking 1 onion, ½ capsicum, 1 tomato, few curry leaves, 2 tbsp coriander and 1 inch ginger.
- also, add 4 tsp schezwan chutney and mix well.
- now pour ladleful of dosa batter over a hot griddle and spread slightly thick.
- top with prepared uttapam toppings spreading uniformly.
- further sprinkle ½ tsp oil, cover and cook for a minute.
- now flip over and press gently.
- continue to roast till both sides get cooked completely.
- finally, serve schezwan uttapam with coconut chutney and schezwan chutney.
schezwan idli recipe:
- firstly, cut 5 idli into 4 cubes. keep aside.
- now heat 3 tsp oil and saute 2 clove garlic and 1 chilli.
- also saute 2Â tbsp spring onion, 2 tbsp onion on high flame.
- further, saute 3 tbsp capsicum and saute slightly.
- now add 4 tsp schezwan chutney, ¼ tsp salt and mix well.
- add in cubed idli pieces and mix gently coating sauce uniformly.
- finally, serve schezwan idli topped with spring onions.
notes:
- firstly adjust the amount of schezwan sauce to your preferences.
- also, use cast iron tawa to prepare crispy dosa.
