to be honest i am not a huge fan of this recipe and i personally do not like sweet or coconut flavoured rice. but having said that i prepare it quite often as my husband likes to relish it with either kurma or even coconut based sambar. but more popularly coconut rice is mainly eaten as it is or with kuzhambu recipes. whenever i plan to prepare this recipe, i make sure to prepare it in small quantities. the idea is to have this flavoured rice as side dish and not as main dish. basically i prepare the coconut based curries with it, so that it can be used for both nariyal chawal and plain steamed rice. further it can also be a good breakfast option with your left over rice and can be enjoyed with simple chutney recipes.
some easy alternatives, tips and recommendations for this simple flavored coconut rice recipe. firstly, i would recommend you to use basmati rice for this recipe especially if you planning use cooked rice. sona masuri should be good alternative but still you may have broken rice and you may feel mushy and over cooked secondly, always use fresh grated coconut for better result. i have tried even with desiccated coconut and it was dull with less flavors from coconut. lastly, in south india the coconut rice is prepared as a savory dish with spices and nuts in it. but it can also be made as a dessert by adding sugar and no spice to it.

Ingredients
- 3 tsp oil
- 1 tsp mustard / rai
- ½ tsp urad dal
- 1 tsp chana dal
- few curry leaves
- 1 dried red chilli
- 2 green chilli, slit
- 1 inch ginger, finely chopped
- 10 cashew / kaju
- ¾ cup coconut, grated
- 2 cup cooked rice
- ½ tsp salt
Instructions
- firstly, in a large kadai heat 3 tsp oil and saute 1 tsp mustard, ½ tsp urad dal, 1 tsp chana dal, few curry leaves, 1 dried red chilli.
- also add 2 green chilli, 1-inch ginger. saute slightly.
- now add 10 cashews and roast till the cashews turn golden brown.
- add in ¾ cup grated coconut and saute for a minute or till raw smell goes away.
- further, add 2 cups cooked rice and ½ tsp salt. mix gently without breaking the rice.
- now cover and simmer for 2 minutes, or till rice absorbs coconut flavour.

Nice presentation. Using left over rice will not be suitable for this…freshly cooked rice gives rich taste..even if it is sona masuri rice we can cooked the rice in 1:2 1/2 ratio with water then the cooked rice will be grainy.
Also to enhance the flavour we can do tadka with coconut oil.
The best combination for coconut rice is avial.
