My first encounter with these deep-fried fritter falafel snacks was during my stopover at Dubai International Airport a few years back. I was curious about this chickpea fritters recipe and I was served in a pita as patties. Initially, I was so clueless about it, and more importantly I was worried whether it was a vegetarian snack. But my husband confirmed and asked me to give it a try. With my first bite, I was already in love with it and it was my new favorite deep-fried snack. My initial impression after a deep bite was having a mixed vegetable pakora or bonda. But it does have its unique taste and flavor making it specific to Middle Eastern cuisine. In addition, the condiments and dips served with it make it super special.
While there aren’t any complex steps in this recipe, I would like to share a few tips and tricks for an easy falafel recipe. Firstly, I would not recommend using canned chickpeas which you get in super supermarket. I would heavily recommend soaking the Kabuli chana or chickpea overnight and using it to prepare the falafel dough. Secondly, I have added baking soda and it helps to make it light and fluffy. However, it is completely optional and you can ignore it safely, but the snack may turn dense. Lastly, falafel as a snack can be served with hummus and tahini sauce. However, it also tastes great with green chutney and mint mayonnaise and is used as a patties for stuffing between breads.

In addition, Falafel ball dough contains additional spices, and herbs making it a unique special Middle Eastern snack. Most commonly it is served just as a snack with multiple dips and condiments. However, it can also be an ideal side dish for other meals like wraps, pide and pizza.
There are many different ways to make this simple and crisp Falafel Ball snack, but the most common way is to make it with soaked chickpeas. Fava beans or a combination of chickpeas can also be a perfect choice, but just chickpeas make it an ideal snack. In addition, the spices and herbs play a significant role in the taste of the snack. Adding onions, parsley, and powdered peanuts makes it even more tasty and crunchy in taste.

Ingredients
- 1½ cup chickpeas, soaked
- ½ onion, sliced
- 3 cloves garlic
- 4 chilli
- 1 bunch coriander
- ½ tsp chilli powder
- ½ tsp pepper powder
- ½ tsp coriander powder
- ½ tsp cumin powder
- ½ tsp baking soda
- 2 tbsp sesame
- 1 tsp salt
- oil, for frying
Instructions
- Firstly, soak 1½ cup chickpeas overnight and drain off the water.
- Transfer the soaked chickpeas into a mixer jar.
- Add ½ onion, 3 cloves garlic, 4 chilli and 1 bunch coriander.
- Pulse and grind to a coarse texture. You can also use a food chopper to blend.
- Transfer the mixture to the large bowl.
- Add ½ tsp chilli powder, ½ tsp pepper powder, ½ tsp coriander powder, ½ tsp cumin powder, ½ tsp baking soda, 2 tbsp sesame and 1 tsp salt.
- Squeeze and mix well making sure all the spices are well combined.
- Take a ball-sized mixture and shape using a cookie cutter. You can shape to your choice.
- Deep fry in hot oil, keeping the flame on medium.
- Do not touch the falafel until it starts to float by itself.
- Stir occasionally, and fry uniformly until the falafel turns golden and crunchy.
- Drain off removing excess oil.
- Finally, enjoy Crispy Falafel Recipe with hummus.

Notes
- Firstly, do not use canned chickpeas or boiled chickpeas as the texture of falafel will be mushy.
- Also, to a crunchy outer layer and soft inside, make sure to add baking soda.
- Additionally, you can refrigerate the falafel mixture for 1 hour before frying to make it flavourful.
- Finally, Crispy Falafel Recipe tastes great when served hot.
What is the measurement of 1 cup. I have a 240ml cup…will it be the correct size for the recipe?
