As I was explaining earlier, this recipe of mousse is prepared without the use of gelatin, agar agar, or egg yolk. Basically, these ingredients help to set the mousse and give the jelly-like texture. As a replacement for it, I have used the custard powder which in turn has corn starch and thus helps the texture. Therefore, this fruit cream dessert can also be renamed a creamy fruit custard recipe. The only difference between the traditional fruit custard and this recipe is the addition of cream. Before, adding I have beaten it to a stiff peak so that it gets the mousse texture. Therefore, once it is chilled, it gets this ideal soft jelly texture. Some custard powder may come without any sweetness in it and hence you may have to increase it based on your preference. Ingredients
for eggless custard:
- 2 cup milk, chilled
- ¼ cup sugar
- 2 tbsp custard powder, sugarless
for whipping cream:
- 1 cup heavy cream
- ½ cup icing sugar
- ½ tsp vanilla extract
other ingredients:
- 2 tbsp almonds, chopped
- 2 tbsp pistachios, chopped
- 2 tbsp cashew, chopped
- 2 tbsp dates, chopped
- 3 strawberry, chopped
- 10 grapes, chopped
- 1 orange, chopped
- 1 apple, chopped
- sabja seeds, for assembling
- rooh afza, for assembling
- tutti frutti, for garnishing
Instructions
- firstly, in a bowl take 2 cup milk, ¼ cup sugar, and 2 tbsp custard powder.
- whisk and mix well making sure there are no lumps.
- transfer the mixture to the pan and start cooking on low flame.
- keep stirring to prevent it from sticking to the bottom of the pan.
- after 5 minutes, the mixture starts to thicken.
- keep cooking until the mixture turns creamy consistency.
- transfer the custard mixture to the bowl. cover, and refrigerate for 30 minutes.
- in another bowl, take 1 cup heavy cream, ½ cup icing sugar, and ½ tsp vanilla extract.
- beat on low speed until the cream turns thick.
- once the custard is chilled, add whipped cream.
- beat until the cream and custard are well combined.
- further, add 2 tbsp almonds, 2 tbsp pistachios, 2 tbsp cashew, and 2 tbsp dates.
- also add 3 strawberries, 10 grapes, 1 orange, and 1 apple.
- mix well making sure everything is well combined. you can chill till serving.
- to serve, in a glass, take 2 tbsp sabja seeds, and 2 tbsp rooh afza.
- add prepared cream fruit mixture.
- top with strawberries and tutti frutti.
