girmit recipe | masala puffed rice | north karnataka mandakki upkari with detailed photo and video recipe. a popular spicy north karnataka street food recipe prepared from puffed rice or murmura. rice puff is known with several names, but popularly it is associated with bhelpuri, churumuri or even mandakki recipes in kannada.
this recipe of girmit is very nostalgic and takes back to my schooldays during my brief stay in hubli, karnataka. i personally do not like much spicy food, but i had a special attraction towards this recipe. perhaps it could be just because puffed rice or it could be because it is a street food. during those days, i use to get only 3-4 spoons of it as my father was very cautious about its spice level. north karnataka cuisine is almost synonymous with the extra spice, it has to offer. you can generally feel the same heat with this recipe too and i recommend to be very cautious while serving this recipe to kids.
while there is no complicated steps in this masala puffed rice recipe, yet i would like highlight few tips and recommendations. firstly, increase or decrease the amount of masala curry while preparing girmit to adjust the spiciness. also, do not over mix as the churumuri will turn soggy and wont taste great. lastly, prepare the masala curry in bulk, can be stored in refrigerator and used when required.

Ingredients
for girmit masala / curry:
- 4 tsp oil
- 1 tsp mustard / rai / sasuve
- ½ tsp jeera / cumin / jeerige
- few curry leaves
- 1 onion, finely chopped
- 2 green chilli, finely chopped
- ½ tsp turmeric / haldi / asrshina
- ½ tsp salt
- 1 tsp putani powder / roasted gram powder
- ½ cup tamarind extract
- ½ tsp jaggery / gud / bella
for serving:
- 2 cups churumuri / mandakki / puffed rice
- 2 tbsp onions, finely chopped
- 3 tsp putani powder / roasted gram powder
- 2 tbsp tomato, finely chopped
- 2 tsp coriander leaves, finely chopped
- handful of sev / mixture
Instructions
- firstly, in a large kadai heat 4 tsp oil and add 1 tsp mustard, ½ tsp jeera and few curry leaves. allow to splutter.
- further add 1 finely chopped onion and 2 green chilli. saute well.
- also add ½ tsp turmeric and ½ tsp salt. saute for a minute.
- additioanlly, add ½ cup tamarind extract and ½ tsp jaggery.
- boil for 3 minutes.
- now add 1 tsp putani powder and mix well.
- girmit masala / curry is ready.
- further, in a large mixing bowl take 2 cups churumuri.
- add in ¼ cup of prepared girmit masala / curry.
- also add 2 tbsp onions, 2 tbsp tomato and 3 tsp putani powder.
- give a rough mix.
- finally, serve north karnataka style girmit recipe garnished with few coriander leaves and handful of sev / mixture.
how to make masala puffed rice with step by step photo:
- firstly, in a large kadai heat 4 tsp oil and add 1 tsp mustard, ½ tsp jeera and few curry leaves. allow to splutter.
- further add 1 finely chopped onion and 2 green chilli. saute well.
- also add ½ tsp turmeric and ½ tsp salt. saute for a minute.
- additioanlly, add ½ cup tamarind extract and ½ tsp jaggery.
- boil for 3 minutes or till the mixture turns thick.
- cook the mixture till oil separates from sides.
- now add 1 tsp putani powder and mix well.
- girmit masala / curry is ready. allow to cool completely and prepare girmit or store in a airtight container and use when required.
- further, in a large mixing bowl take 2 cups churumuri.
- add in ¼ cup of prepared girmit masala / curry.
- also add 2 tbsp onions, 2 tbsp tomato and 3 tsp putani powder.
- give a rough mix, do not over mix as churumuri / puffed rice will turn soggy.
- finally, serve north karnataka style girmit recipe garnished with few coriander leaves and handful of sev / mixture.
notes:
- firstly, adjust the green chilli depending on the spice level.
- also, prepare the girmit just before serving. however, ypu can prepare the masala before in hand and store.
- additionally, serve fried green chilli along with spicy girmit to enjoy the real taste.
- finally, north karnataka style girmit recipe taste great when prepared spicy.
