many would argue that this is just another variation of rava dosa recipe. well, from the texture and appearance, it has striking similarities with it but the taste is completely different. moreover, the combined ingredients are different. in this, i have used just rice flour, rava whereas, in rava dosa, it is rava, rice flour and maida. also, the proportions are significantly different. in this recipe, rice flour takes a huge proportion, whereas in rava dosa it is semolina. this proportion helps to give the required taste and texture to the dosa. in addition, i have added veggie grate like carrot, onions and fresh herbs which makes it an ideal breakfast recipe.

furthermore, some more additional tips, suggestions and variants to the rice flour dosa recipe. firstly, this is an instant version dosa recipe and hence it does not require any additional fermentation and grounding process. moreover, it does not even require eno or baking soda for fermentation, but you may add eno if you prefer to. secondly, i have used non-stick tawa to roast this dosa till it is crisp. you may use a cast iron dosa pan too, but non-stick is a much better option. lastly, as an alternative to this dosa, you may add a boiled potato grate or even bottle gourd to make it vegetable-based dosa. also, roast the dosa in low to medium heat to get the golden crisp colour.

Ingredients
  

for rice flour dosa:

  • cup rice flour
  • ½ cup rava / semolina / suji, coarse
  • ¾ tsp salt
  • 4 cup water
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 2 chilli, finely chopped
  • 2 tbsp coriander, finely chopped
  • few curry leaves, chopped
  • 1 tsp cumin
  • oil, for roasting

for onion chutney:

  • 2 tsp oil
  • ¼ cup peanut
  • 3 dried red chilli
  • 2 clove garlic
  • ¼ cup roasted gram dal
  • small piece tamarind
  • ½ tsp salt
  • ½ cup water

Instructions
 

how to make crispy rice flour dosa:

  • firstly, add 1½ cup rice flour, ½ cup rava and ¾ tsp salt.
  • pour 4 cup water and mix using a whisk.
  • further add 1 onion, 1 carrot, 2 chilli, 2 tbsp coriander, a few curry leaves and 1 tsp cumin.
  • mix well and rest for 20 minutes for rava to soak well.
  • after 20 minutes, you can see the batter is watery. you can adjust the consistency by adding water if required.
  • when the pan is super hot, pour the batter on the pan.
  • spread 1 tsp oil and allow to roast for 2 minutes or until the dosa turns crisp.
  • finally, enjoy the crispy rice flour dosa recipe with peanut chutney.

how to make onion chutney:

  • firstly, in a pan heat 2 tsp oil and roast ¼ cup peanut.
  • roast until the peanuts turn crunchy.
  • now add 3 dried red chilli, 2 clove garlic and ¼ cup roasted gram dal.
  • roast until the chill puffs up and turns golden brown.
  • cool completely and transfer to the mixer jar.
  • add a small piece of tamarind, ½ tsp salt and ½ cup water.
  • blend to smooth paste.
  • transfer the chutney to the bowl and pour tempering.
  • finally, enjoy onion chutney with crispy rice flour dosa.
