i have always been a huge fan of crunchy snack recipes but at the same time, i get bored with just one type of snack. i always crave something unique and innovative snacks and pasta-based kurkure is one such unique snack. i feel this is one of the simple snacks as there is no kneading and rolling and use the readily available pasta shells. you may use the homemade pasta shells to this recipe, but i believe using the store-bought is much easier. basically, you boil it and coat it with spices to deep fry it till it becomes crisp and crunchy. once it is deep-fried you may use any type of masala spices to coat it to form multiple variants.
furthermore, some more additional tips, suggestions and variants to the macaroni kurkure recipe. firstly, i have used the narrow tubes of pasta made out of durum wheat, but you may also prepare it with other types of pasta. you may use the penne pasta, rigatoni, fusilli and even raviolli pasta shells. secondly, while deep frying these shells, ensure to have low to medium hot oil. it should gradually fry which not only cooks it evenly but also makes it crisp and crunchy. lastly, these shells can easily last longs for a couple of weeks. generally, the shelf life of these improves when stored in an airtight container.

Ingredients
for crispy kurkure:
- water
- 1 tsp salt
- 2 tsp oil
- 2 cup macaroni pasta
- ¼ cup maida
- ½ cup corn flour
- oil, for frying
for tandoori flavour:
- 1 tsp chilli powder
- ½ tsp cumin powder
- ½ tsp coriander powder
- ½ tsp garam masala
- 1 tsp kasuri methi, crushed
- ¼ tsp salt
for chatpata chaat flavour:
- 1 tsp chaat masala
- ¼ tsp pepper powder
- ¼ tsp salt
Instructions
- firstly, in a large vessel take enough water.
- add 1 tsp salt, 2 tsp oil and get to a rolling boil.
- once the water boils, add 2 cup macaroni pasta. you can use any shape of your choice.
- boil for 7 minutes, or check package instructions to know the cooking time.
- once the pasta turns al dente, drain off the water.
- rinse with cold water to prevent from overcooking the pasta.
- transfer the boiled pasta to a large bowl. and add ¼ cup maida and ¼ cup cornflour and mix well.
- add more cornflour if required and coat the pasta with flour.
- deep fry in hot oil, keeping the flame on low to medium.
- keep stirring in between and fry until the pasta turns golden and crispy. take at least 15 minutes to get crispy kurkure.
- drain off over kitchen towel to get rid of excess oil.
how to make tandoori flavour kurkure:
- take fried pasta in a large bowl. add 1 tsp chilli powder, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, 1 tsp kasuri methi and ¼ tsp salt.
