as i was explaining earlier, everyone like to have a munching snack, especially watching a favourite tv show or with a cup of tea. these snacks are generally store-bought which tastes so good but may contain taste enhance msg and also loaded with preservatives. hence it is always recommended to have homemade food. i have been posting a lot of such variants and homemade chawal ke kurkure is a new snack added to it. i have tried to use the same ingredients as the store-bought ones, but have skipped some or found some alternative to it. especially i have added wheat flour in the place of plain flour to make it more healthy. however, there is some compromise on the crispiness. in other words, these homemade can turn soft if kept in open, so there might be a slight disadvantage.

kurkure recipefurthermore, i would also like to add some more tips, suggestions and variants to homemade chawal ke kurkure. firstly, the recipe can be made with different types of ingredients like poha, rava, bhel, corn, but the authentic is made with rice flour. hence i would recommend to use the same and perhaps you can use other variants later. secondly, these are not as crispy as store-bought and hence has to be store carefully. you have to store it in an airtight container for better shelf life. lastly, i have added dry spices like garam masala, chilli powder and chaat masala. you may skip all to reduce to just chilli powder and salt as additional seasoning toppings.

Ingredients
  

  • 1 cup rice flour
  • ¼ cup besan / gram flour
  • 2 tbsp wheat flour
  • ¼ tsp baking soda
  • ½ tsp salt
  • 2 cup water
  • 1 tsp butter
  • 1 tbsp cornflour
  • oil, for frying

for seasoning:

  • ½ tsp chilli powder
  • ½ tsp garam masala
  • ½ tsp chaat masala
  • ¼ tsp salt
  • 1 tsp powdered sugar

Instructions
 

  • firstly, in a large bowl take 1 cup rice flour, ¼ cup besan and 2 tbsp wheat flour.
  • add ¼ tsp baking soda, ½ tsp salt and 2 cup water.
  • whisk and mix well making sure everything is well combined.
  • transfer the mixture to a large kadai and start stirring.
  • cook on low flame until the mixture starts to thicken.
  • continue to cook until the mixture starts to hold shape.
  • add 1 tsp butter and mix well making sure everything is well combined.
  • cover and rest for 5 minutes.
  • now transfer the dough to large bowl.
  • add 1 tbsp cornflour and start to knead the dough.
  • knead to smooth and non sticky dough.
  • grease hands with oil and pinch a small ball sized ball.
  • shape into random shape by pressing over fingers.
  • deep fry in hot oil keeping the flame on low to medium.
  • stir and fry gently without damaging the kurkure.
  • fry on low flame until it turns golden and crispy.
  • drain off from the oil to absorb excess oil.
  • transfer the fried kurkure to a large bowl.
  • add ½ tsp chilli powder, ½ tsp garam masala, ½ tsp chaat masal, ¼ tsp salt and 1 tsp powdered sugar/
  • mix well making everything is well combined.
  • finally, kurkure recipe tastes great for 3-4 days when stored in an airtight container.

notes:

  • firstly, make sure to add spices of your choice like onion powder, garlic powder to make it chatpata.
  • also, i have used wheat flour you can replace with maida if you are not conscious.
  • additionally, adding besan gives a flavour to kurkure. so do not skip it.
