kurkuri bhindi recipe | crispy bhindi | bhindi kurkuri | karari bhindi with step by step photo and video recipe. bhindi or okra is one of the popular vegetables when it comes vegetarian dishes or curries. there are many outstanding recipes out of the okra’s which you can serve either for lunch, dinner or as snack. but then the recipe of kurkuri bhindi recipe is a combination of both and can be served as sides or snack.

i have posted quite few okra recipes till now and the okra fry or kurkuri bhindi recipe is my favorite. as matter of fact i had already shared this recipe long back, but i am re posting with better recipe, video and photos. the major difference between my previous post and to the latest one is the use of spices in it and also the proportion of each ingredients. to begin with, in this new recipe i have increased the amount of besan and rice flour to make it more crispy and kurkuri. while adding besan, it should be more crispy but may you may feel filling with each bite. you may reduce it if you wish to. also in ths spices section, i have added chat masala to make it even spicy and chatpata.

furthermore, some more tips, suggestions and variations for a perfect and a crisp kurkuri bhindi recipe. firstly, as i mentioned earlier you need to use a tender and fresh ladies finger or okra for this recipe. as matter of fact, you can verify the tenderness of okra by snapping the tip of okra. secondly, i have deep fried the spiced okra with good amount of oil which should hasten the frying process. having said that pan frying is still an option which should be sufficient for the purpose. lastly, unlike other bhindi recipes, you can pre cook it and store it in air tight container. it should have week’s shelf life and you should be able to use it whenever required.

Ingredients
  

  • 260 grams bhindi / okra
  • 1 tsp kashmiri red chilli powder
  • ¼ tsp turmeric
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp chaat masala
  • 1 tsp lemon juice
  • ½ tsp salt
  • ¼ cup besan / gram flour
  • ¼ cup rice flour
  • 2 tsp oil
  • oil, for frying
  • chaat masala

Instructions
 

  • firstly, take 260 grams bhindi. make sure to wash and pat dry before slicing.
  • slice into thick strips and remove off the seeds.
  • add 1 tsp chilli powder, ¼ tsp turmeric, ½ tsp coriander powder, ½ tsp cumin powder and ½ tsp chaat masala.
  • mix well making sure spices are well coated.
  • now add 1 tsp lemon juice and ½ tsp salt. mix well.
  • marinate for 10 minutes making sure the flavours are absorbed.
  • further, add ¼ cup besan and ¼ cup rice flour.
  • mix well coating the flour uniformly.
  • also, add 2 tsp oil and mix gently coating the masala well.
  • do not add any extra water, salt helps to release moisture and adding water makes bhindi sticky.
  • deep fry in hot oil spreading uniformly.
  • stir occasionally and fry on medium flame.
  • fry until the bhindi turns crisp and golden.
  • drain off over kitchen paper to remove excess oil. you can also sprinkle pinch of chaat masala to enhance the flavour.
  • finally, enjoy kurkuri bhindi as an evening snack or for a side dish of lunch.

notes:

  • firstly, make sure to pat bhindi dry else it will turn sticky while chopping.
  • also, do not add any water while mixing the spices.
  • additionally, if the seeds of bhindi are tender then you can use them as it tastes good.
  • finally, kurkuri bhindi recipe tastes great when masala is coated well.
