Pudla Recipe | Pudala Besan Chilla | Savory Pancake with detailed photo and video recipe. An extremely simple and balanced tasty breakfast meal prepared with gram flour and paneer grate. It is a healthy and filling extension to the traditional besan chilla with the goodness of cottage cheese. It is loaded with all spices and herbs, hence does not require any particular side dish, but tastes great when served with green chutney.

There is a wide range of recipes across India but the significant ones are from South and North India. One such hugely popular North Indian or Gujarati cuisine is pudla recipe known for its quick and easy turnaround.

I have posted different types of chilla recipes which include besan and other types of flours. But this recipe of pudla most commonly known as pudala pancake is super unique. The addition of paneer grate to besan batter makes it super healthy and more filling. I am not a huge fan of besan-based breakfast recipes as I feel it is difficult to digest. However, I make an exception to this creamy and rich breakfast chilla. The only reason is the paneer grate used to make these tasty pancakes. Moreover, when these creamy pancakes are served with spicy condiments like green chutney, the taste is so satisfying. Do try this combo and I am certain you would enjoy it.

Furthermore, some more related and additional tips, suggestions, and variants to pudla recipe. Firstly, I would heavily recommend using fine best quality besan flour for this recipe. This would not only ensure a smooth consistency batter but also elevate the taste and flavor. Do check the expiry before using besan flour. Secondly, use a fine grate to grate the paneer. It can be easily mixed with batter and also topped with the chilla while it is cooked. Also, use the nonstick tawa pan to fry these pancakes. Lastly, the recipe I have shown is a healthy version, but you may use butter or ghee to top the chilla. It is not mandatory but if you are planning to serve it to kids, ghee and butter can be ideal.

Ingredients
  

  • 1½ cup besan / gram flour
  • ¼ tsp turmeric
  • ½ tsp chilli powder
  • pinch hing
  • ½ tsp ajwain
  • ½ tsp salt
  • water, for batter
  • ½ onion, finely chopped
  • ½ capsicum, finely chopped
  • ½ tomato, finely chopped
  • ½ cup paneer, grated
  • 2 tbsp sesame
  • 2 tbsp coriander, chopped
  • ½ tsp ginger paste
  • oil, for roasting

Instructions
 

  • Firstly, in a bowl take 1½ cup besan, ¼ tsp turmeric, ½ tsp chilli powder, pinch hing, ½ tsp ajwain and ½ tsp salt.
  • Mix well making sure all the spices are well combined.
  • Add 1 cup water and mix using a whisk.
  • Prepare a smooth batter and mix continuously for 5 minutes.
  • Now add ½ onion, ½ capsicum, ½ tomato, ½ cup paneer, 2 tbsp sesame, 2 tbsp coriander and ½ tsp ginger paste.
  • Mix well making sure everything is well combined.
  • Rest for 10 minutes, or until the besan are absorbed well.
  • Now heat the pan, and pour the batter. spread gently making sure the chilla is as thin as possible.
  • Spread half tsp oil.
  • Cook on medium flame making sure the base is cooked well.
  • Flip over and roast both sides.
  • Finally, enjoy Besan Pudla Recipe with chutney and raita.

  • Firstly, grate the paneer and add it to the batter to soften the chilla and increase the protein content.
  • Also, roast both sides to get crispy and soft from the inside.
  • Additionally, beating the batter well makes the besan light and not dense.
