spoiled milk recipes | wheat dosa or chilla | pakoda & kesar peda sweet with detailed photo and video recipe. one of the simple and handy recipes to have in your kitchen pantry using the curdle from spoiled milk. milk when curdled or spoiled is generally thrown thinking that it is of no use, but it is a great source of protein and nutrients. basically, a tasty and healthy breakfast, snack and sweet dessert recipe using chenna from sour milk.

i have been getting a lot of requests from my readers to post some recipes with curdled milk. i personally prepare paneer or cream cheese using sour milk but i thought of showcasing a series of recipes with spoiled milk. in other words, i have shown a breakfast recipe, a snack recipe and finally a dessert recipe. this should cater for everyone or perhaps can prepare a complete meal with this milk. to be honest, there isn’t any rocket science with dessert, but my favourite out of these is the wheat dosa or cheela recipe. it is not only a tasty recipe but also a complete power-packed breakfast meal for the morning. in addition, the pakoda snack too is a healthy alternative compared to any random snack. hence i would strongly recommend trying these recipes once rather than throwing away the spoiled milk.

furthermore, some more additional tips, suggestions and variants to the spoiled milk recipes. firstly, in this post, i have showcased only 3 types of recipes, but there is numerous recipe prepared from it. basically, you may prepare different types of sweets and dessert recipes using it. secondly, from a health perspective, do not use expired milk and use only spoiled milk for this recipe. expired milk may be loaded with unwanted bacteria and it may harm your appetite or digestion. lastly, from a dessert perspective, you may follow the same procedure to prepare kalakand, palkova and even rasgulla and rasmalai. my idea was to show a simple dessert recipe and hence i showed kesar peda for this recipe.

Ingredients
 

for wheat dosa:

  • 2 cup spoiled milk
  • 1 cup wheat flour
  • ¼ cup rava / semolina / suji (coarse)
  • ½ tsp salt
  • ½ cup water
  • ½ capsicum (finely chopped)
  • 1 carrot (grated)
  • 2 tbsp coriander (finely chopped)
  • 2 chilli (finely chopped)
  • ¼ tsp turmeric
  • 1 tsp cumin
  • oil (for roasting)

for crispy pakoda:

  • 2 cup spoiled milk
  • 1 cup maida
  • ¼ cup rice flour
  • 1 tsp cumin
  • 2 tbsp onion (finely chopped)
  • 2 tbsp coriander (finely chopped)
  • 2 chilli (finely chopped)
  • ¼ tsp baking soda
  • ½ tsp salt
  • oil (for frying)

for milk peda:

  • 3 cup spoiled milk
  • 1 cup milk powder (unsweetened)
  • ¾ cup condensed milk / milkmaid
  • ¼ tsp cardamom powder
  • ¼ tsp saffron food colour

Instructions
 

how to make wheat dosa using spoiled milk:

  • firstly, in a large bowl take 2 cup of spoiled milk.
  • add 1 cup wheat flour, ¼ cup rava and ½ tsp salt.
  • mix well making sure everything is well combined.
  • further, add ½ cup water, whisk and mix forming a smooth batter.
  • now add ½ capsicum, 1 carrot, 2 tbsp coriander, 2 chilli, ¼ tsp turmeric and 1 tsp cumin.
  • mix well combining everything well.
  • now pour the batter on hot tawa and spread slightly.
  • spread some oil on top of the dosa, cover and simmer for 1 minute.
  • flip over and cook both sides.
  • finally, enjoy wheat dosa with chutney.

how to make crispy pakoda using spoiled milk:

  • firstly, in a large bowl take 2 cup of spoiled milk.
  • add 1 cup maida, ¼ cup rice flour and 1 tsp cumin.
  • also add 2 tbsp onion, 2 tbsp coriander, 2 chilli, ¼ tsp baking soda and ½ tsp salt.
  • mix well making sure everything is well combined.
  • further dip hand in water, and drop ball sized batter in hot oil.
  • fry uniformly, keeping the flame on medium until the pakoda turns golden brown and crisp.
  • drain off the pakoda to get rid of excess oil.
  • finally, enjoy crispy pakoda with chutney.

how to make milk peda using spoiled milk:

  • firstly, strain out 3 cup of spoiled milk to collect paneer from the milk.
  • transfer the paneer into large kadai and mash smooth keeping the flame on low.
  • add 1 cup milk powder, ¾ cup condensed and mix well.
  • cook until the mixture starts to separate the pan.
  • now add ¼ tsp cardamom powder and ¼ tsp saffron food colour.
  • mix well until the mixture starts to hold the shape.
  • cool the mixture slightly, and shape to peda and mark design of your choice.
  • finally, enjoy milk peda or store in an airtight container for a week in the refrigerator.

notes:

  • firstly, make sure not to use expired milk as it may ruin your appetite. you can use the milk which got spoiled while boiling accidentally.
  • also, once the milk is spoiled the natural sweetness of fresh milk will be converted to a sour taste, so do not add curd or any sourness to the batter.
  • furthermore, smell the spoiled milk before using it. if it smells bad, then make sure not to use it.
  • finally, recipes prepared with spoiled milk does not stay long, so prepare and use them wisely.
