sukha puri recipe | stuffed sukha poori chaat | sukha masala puri with detailed photo and video recipe. a simple and tasty dry version of sev puri filled with spiced aloo stuffing and topped with generous amount of fine sev. typically sukha puri is served as a complimentary snack after pani puri or perhaps other chaat recipes. hence often it is prepared with flat or uneven or sometimes with damaged puri’s.
as i mentioned previously, stuffed sukha poori chaat is generally served after having spicy pani puri. the main reason it was served is to settle down with the spicy pani puri water with a bland snack. moreover, this complimentary snack was only on demand was delivered if required. however these days sukha masala puri has become an integral part of many chaat recipes and are immediately served after you finish with the main chaat recipe. but this does not stop us having this simple snack by itself and can be prepared easily by almost everyone. moreover, if you have observed, each and every street vendor may have his own variation to this open-ended snack. basically, the stuffing is varied and it can be either aloo, ragda or chickpea stuffing.
while the recipe is extremely simple, i would highlight some tips and serving ideas for sukha puri recipe. firstly, the puri’s can be stuffed with myriad options. i have used the simple aloo based stuffing which is easy and fast to prepared. but you can also use ragda/white peas or chickpea stuffing too. secondly, i personally do not like to have a sweet taste to my sukha puri and would love to keep it dry. but it also tastes great when topped with sweet tamarind chutney. finally, serve these stuffed sukha poori chaat immediately once you prepare it. otherwise, it may turn soggy if served later. moreover, the recipe takes only a few minutes to prepare, so it should be good to prepare and serve immediately.

Ingredients
for aloo mixture (serves 6 plate:):
- 2 potato / aloo, boiled &
- mashed
- ½ tsp kashmiri red chilli powder / lal mirch powder
- ½ tsp cumin powder / jeera powder
- 1 tsp chaat masala
- ¼ tsp dry mango powder / aamchur
- 1 tsp green chutney
- ¼ tsp salt
for assembling (1 plate):
- 7 puri / golgappe puri
- pinch of chaat masala
- pinch salt
- handful sev
- pinch of kashmiri red chilli powder / lal mirch powder
- 1 tbsp coriander leaves, finely chopped
- ¼ lemon juice
Instructions
- firstly, in a large mixing bowl take 2 boiled and mashed potato.
- add ½ tsp chilli powder, ½ tsp cumin powder, ¼ tsp aamchur, 1 tsp chaat masala, 1 tsp green chutney and ¼ tsp salt.
- mix all the ingredients well. aloo mixture ready.
- now in a small plate take 7 puri and make a hole in the centre.
- stuff in prepared aloo mixture. do not overstuff the mixture.
- also sprinkle, chaat masala, salt and chilli powder.
- add in fine sev into each puri.
- further, garnish with chopped coriander leaves and squeeze ¼ lemon juice.
- finally, serve sukha puri immediately after pani puri or enjoy as it is.
how to make sukha puri recipe with step by step photo:

notes:
- firstly, to the stuffing add boiled and mashed channa to enhance the flavour.
- also, prepare sukha puri just before serving, else puri will turn soggy.
- additionally, top with extra green chutney on each puri to make it spicier.
