well many would start asking this question by now, what is the difference between traditional akki roti and ukkarisida akki rotti. the major difference is the puffiness and softness it brings with this recipe compared to the traditional one. as you can see in the video, it puffs like a phulka and cooked similar to the phulka. in other words, it is half cooked and put directly to the flame so that it puffs. in addition, this roti is just made with rice flour as compared to the crisp akki rotti. you do not add spices, herbs and coconut which helps to make it flat and crisp and avoid puffiness. these are the 2 major differences, but from a taste perspective, each has its own appeal and taste flavour.
furthermore, i would also like to add some more tips suggestions and variations for a perfect ukkarisida akki rotti. firstly, i would heavily recommend using fine-textured rice flour for this recipe. avoid using coarse powder as you may not get the same softness and puffiness. you may also use rice grains but may have to powder it to fine before using it. secondly, while cooking in the direct flame, make sure to turn the heat to full flame. this helps to puff up the roti immediately. however, you may need to be careful while flipping it and avoid burning it. lastly, these roti’s taste great with spicy and creamy curries, like bharli vangi, sprouts masala and baingan bharta.

Ingredients
- 2 cup water
- 1 tsp oil
- ½ tsp salt
- 2 cup rice flour / akki hittu, fine
Instructions
- firstly, in a large kadai take 2 cup water, 1 tsp oil and ½ tsp salt.
- get the water to a rolling boil.
- now add 2 cup rice flour and mix gently. do not worry if there are lumps.
- once the water is well absorbed, cover and simmer for 2 minutes.
- now the mixture is super moist.
- transfer the rice flour mixture to a large bowl.
- when the mixture is still hot, start to knead by dipping hand in the water.
- knead to form a smooth dough. dipping hand in water prevents them from burning.
- form a smooth and soft dough.
- now pinch a ball sized dough and knead again.
- dust the rolling board with rice flour to prevent from sticking.
- also, dust the dough with rice flour and start to roll gently.
- roll to uniform thickness dusting rice flour if required.
- now transfer the rolled rotti to a hot tawa.
- wipe off the flour using a wet cloth. note, you need to wipe off only one side.
- once the base is partially cooked, flip over and cook.
- cook both sides partially as we will be cooking directly on the flame.
- now place on the flame directly, and allow to puff up.

notes:
- firstly, make sure knead the dough really well, if there are cracks then roti will not puff up.
- also, follow the proportion (1:1 ratio) of rice flour and water accurately.
- additionally, if you are not comfortable to cook like phulka then you can try to puff up on tawa itself.
