there are myriad ways to prepare biriyani recipes across indian if not in the south-east asia. by keeping the same ingredients and the rice, there are different styles and different tastes to a simple biriyani recipe. this is one such variation from the bangalore cuisine. as matter of fact, the meat variant of this recipe is sold in the early morning for breakfast in the outskirts of bangalore. there would be a big queue just to get one portion of this and it quickly runs out within 6 to 7 am in the morning. moreover, donne biriyani recipe is not sold every day and only on selected days. the killer taste for this recipe is mainly derived from locally sourced ingredients. the ginger, garlic, mint, coriander, fenugreek are locally grown and used for this recipe. even the meat is locally farmed and sourced especially for this recipe. that’s how the recipe name of nati style is derived which means local village style. i have tried to mimic the style, but i guess the meat-eaters would not approve of this variant with veggies.

furthermore, some more additional tips, suggestions and variations to the donne biriyani recipe. firstly, the combination of herbs like mint leaves, coriander leaves and fenugreek is an important source of flavour for this recipe. if you do not have this, you may avoid preparing this variant and make the traditional dum biriyani recipe. secondly, i have specifically used jeerga samba rice for this recipe and that’s what is generally used in nati style. yet, you may use other types of rice variants like sona masuri or ponni raw rice for the same effect. lastly, once the biriyani is prepared, it tastes great when rested for a while. it helps the rice to absorb all the flavour and tastes great. also, you may follow the same procedure to prepare a meat variant of donne biriyani.

Ingredients
  

for masala paste

  • 2 tsp oil
  • 1 inch cinnamon
  • 4 cloves
  • ½ tsp pepper
  • ½ onion, sliced
  • 10 cloves garlic
  • 2 inch ginger
  • 5 chilli
  • 1 cup mint
  • 1 cup coriander
  • ½ cup fenugreek
  • ½ tsp salt
  • ½ cup water

for biryani:

  • 2 tbsp oil
  • 2 tbsp ghee
  • 1 inch cinnamon
  • 3 pod cardamom
  • 3 cloves
  • ½ tsp pepper
  • 1 tsp cumin
  • 1 onion, sliced
  • 1 potato, cubed
  • 1 carrot, chopped
  • 5 beans, chopped
  • ¼ tsp turmeric
  • ½ tsp chilli powder
  • 1 tsp biryani masala
  • ½ tsp salt
  • ¾ cup curd
  • 2 cup water
  • 1 cup seeraga samba rice, soaked 20 minutes
  • ½ lemon

Instructions
 

  • firstly, in a pan heat 2 tsp oil, add 1 inch cinnamon, 4 cloves and ½ tsp pepper. saute on low flame until the spices turn aromatic.
  • add ½ onion, 10 cloves garlic, 2 inch ginger and 5 chilli.
  • saute until the onions change colour slightly.
  • further add 1 cup mint, 1 cup coriander, ½ cup fenugreek and ½ tsp salt.
  • saute until the leaves shrink and turn aromatic.
  • cool completely, and transfer to the mixer jar.
  • grind to smooth paste adding ½ cup water. keep aside.
  • in a large kadai heat 2 tbsp oil and 2 tbsp ghee. add 1 inch cinnamon, 3 pods cardamom, 3 cloves, ½ tsp pepper and 1 tsp cumin.
  • saute on low flame until the spices turn aromatic.
  • add 1 onion and saute until the onions turn golden brown.
  • further, add the prepared masala paste and cook for 2 minutes or until the raw flavour is gone.
  • now add 1 potato, 1 carrot, 5 beans, ¼ tsp turmeric, ½ tsp chilli powder, 1 tsp biryani masala and ½ tsp salt.
  • saute until the spices are well combined.
  • keeping the flame on low add ¾ cup curd and mix well.
  • add 2 cup water 1 cup seeraga samba rice (soaked 20 minutes), ½ lemon and mix well.
  • cover and simmer for 20 minutes or until the rice is cooked completely.
  • rest for 30 minutes, before opening the lid.
  • finally, enjoy donne biryani with raita.

  • firstly, using seeraga samba rice gives a nice flavour to the biryani. if you do not have, then you can also use sona masuri rice or basmati rice.
  • also, adding fenugreek is mandatory. the methi leaves take the biryani to a different level.
  • additionally, i have added just vegetables. if you are looking to add chicken or mutton, then feel free to add.
