well, to be honest, i believe many would not be familiar with this halwa or barfi as walnut is not a popular choice by many. but i would like to emphasis on the outcome of this recipe. unlike other dry fruits, it has a unique taste and flavour. basically the walnuts have a bland taste in general. however, when mixed with sugar and milk it yields a pleasant taste. i like the creamy taste of this recipe which just melts in the mouth. moreover the combination of sugar and milk is a perfect combo for any sweet recipe. you mix any dry fruit it would result in an ideal sweet and this recipe is not an exception.

akhrot ka halwaanyway, i would like to add some more tips, suggestions and variations to the walnut halwa recipe. firstly, i would like to put more stress on the choice of walnuts. with my experience, i have seen there are some walnuts which may taste bad and bitter. typically the old stock tastes bad and hence you need to be careful to choose those. secondly, in this recipe i have used only walnuts, but this can easily experiment with other dry fruit variations. particularly, you can use pistachios, cashews and almonds. lastly, due to the use of milk in this recipe, the shelf life is very low. you may need to finish it off within 2 to 3 days of preparation.

Ingredients
  

  • 1 cup (125 grams) walnut
  • ¼ cup ghee / clarified butter
  • ¾ cup milk
  • ½ cup sugar
  • few threads of saffron / kesar
  • ¼ tsp cardamom powder

Instructions
 

  • firstly, in a pan dry roast 1 cup walnut on low flame.
  • roast until the nuts turn crunchy and change colour slightly.
  • cool completely, and transfer to a mixi blending to a coarse powder.
  • now in a large kadai heat ¼ cup ghee and add walnut powder.
  • saute on low flame until the ghee is completely absorbed.
  • now add ¾ cup milk, ½ cup sugar and few thread saffron.
  • mix continuously until everything is well combined.
  • continue to mix till it turns silky smooth texture.
  • after 15 minutes, the mixture will thicken.
  • and the mixture will start to separate the pan oozing out the ghee.
  • now add ¼ tsp cardamom powder and mix well.
  • cook until the mixture will start to hold the shape and turns frothy.
  • transfer the mixture to a box lined with butter paper.
  • level it up and then top with chopped walnuts.
  • press gently and rest for 30 minutes or until the halwa is set.
  • cut into pieces of the desired shape.
  • finally, enjoy walnut halwa for a week when stored in an airtight container.

  • firstly, make sure to roast walnuts on low flame until it turns crisp.
  • also, you can use almond milk in place of cow milk as a vegan substitute.
