traditional chaklis are prepared with urad dal flour. few steam the flour and alternatively few add boiling water and knead the dough soft. there are many variations in ingredients as well. few do add coriander powder, sesame seeds, black pepper. however, i have just used turmeric powder, chilli powder, cumin seeds, salt and asafoetida. muruku taste great when eaten with coconut chutneygreen chutney or plain sipped with masala tea or masala milk.

adding butter while kneading dough makes chakkuli more flavourful. my mom adds coconut milk along with butter to have a rich flavour. i love to have crunchy chaklis as my evening snack along with masala tea or masala milk. my dad used to always say, chakklis are perfect when there are nice pointed marks on it and a clear hole at the centre when you break them. you can also prepare butter chakkuli, palak chakkuli, besan chakkuli, spicy chakli etc.

Ingredients
  • 1 cup rice flour
  • ½ cup maida / all-purpose flour / plain flour
  • ¼ tsp turmeric powder
  • ½ tsp kashmiri chilli powder
  • ¾ tsp cumin seeds / jeera
  • salt to taste
  • ¼ tsp hing /asafoetida
  • oil for deep frying
  • ¼ cup curd / yogurt
  • 1 tbsp butter, unsalted - at room temperature
  • ¼ cup water or as required to knead dough
Instructions ( 1 cup =255 ml)
  1. in a large mixing bowl, take 1 cup of rice flour.
  2. to that add ½ cup maida
  3. also add turmeric powder, kashmiri chilli powder, cumin seeds and salt to taste.
  4. then add butter and hing. roughly mix everything.
  5. now add curd and again give a rough mix.
  6. slowly add water as required and knead.
  7. knead to smooth dough. if the dough is too stiff then chaklis will break when you try to shape them using mold. if the dough is too soft then chaklis will absorb oil. so make sure to make a smooth dough.
  8. now take star mold and fix to the chakli maker.
  9. grease the chakli maker with some oil. this prevents dough from sticking to mold.
  10. now make a cylindrical shape out of dough and place the dough inside maker.
  11. tighten the lid and start preparing chaklis.
  12. on the wet cloth or butter paper make spiral shape chaklis by pressing.
  13. seal the ends so that it doesn't fall apart while deep frying.
  14. take one chakli at time and slide it into hot oil carefully directly or use slotted spoon. fry chaklis on medium flame.
  15. flip the chaklis and fry till they turn golden brown and crispy from both sides.
  16. drain them to the paper towel to remove excess oil.
  17. serve chakli with masala tea or masala milk.

notes:

  • store the fried chakli in air tight container, only once they cool down completely.
  • do not fry too many chaklis at the same time as they may stick to each other.
  • spiral shape is not mandatory. if you are not able to get proper spiral shape, nothing to worry. deep fry them, as they still taste great.
  • if the dough is too stiff then chaklis will break when you try to shape them using mold. so few drops of water and knead again.
  • do not make the dough too soft. otherwise your chaklis will absorb too much oil.
  • drop the chaklis onto hot oil, and later fry them on medium flame. so that it gets cooked well and also turns crispy.
  • grease the chakli maker with some oil. this prevents dough from sticking to mold.
  • you can use wet cloth, butter paper, news paper, plastic sheet or aluminium foil to press the chaklis.
