in addition, there are several varieties and flavours prepared from dosa batter. among them, mysore masala dosa is one of the popular dosa recipe originated from mysore, karnataka. apart from stuffing potato masala into this dosa; we do spread generous amount of red chutney which makes the dosa unique. also, the batter is prepared bit different to normal dosa batter. in this we add 2 tsp of rava to make it crispy. in addition, we also add channa dala and urad dal to obtain the golden colour.

furthermore, the masala dosa is incomplete with chutney and sambar. i have posted several chutney varieties specifically for dosa, idli and other breakfast recipes. check my coconut chutneychanna dal chutneyridge gourd chutney, tomato onion chutney. i personally prefer simple freshly grounded coconut chutney with any dosa. however, in my house chutneys are always prepared by my husband. and he loves peanut chutney with some extra spice level.

Ingredients
  • 3 cup raw rice, sona masuri / dosa rice
  • 1 cup urad dal
  • fistful kadle bele / chana dal
  • fistful togari bele / toor dal
  • ½ tsp methi seeds / fenugreek seeds
  • 1 cup poha / thin beaten rice
  • 2 tsp rava / semolina / sooji
  • 1 tsp sugar
  • 1 tsp salt
      Instructions ( 1 cup =255 ml)
      preparing the dosa batter:
      1. firstly, soak in the rice, methi, toor dal, chana dal in bowl for 4-6 hours.
      2. furthermore, in another bowl soak the urad dal in enough water for 3-4 hours
      3. also, soak the poha or flattened rice in ¼ cup of water.
      4. firstly, grind the soaked urad dal to a fine and fluffy batter.
      5. also grind the rice, methi, chana dal, toor dal and poha to a smooth batter.
      6. mix both the rice and urad dal batter.
      7. cover and let the batter ferment for 8-9 hours.

      preparing the masala dosa:
      1. firstly, take required batter in a small bowl.
      2. and now add salt, sugar and rava to the batter and mix well.
      3. also once the tawa is hot; pour a ladleful of batter and spread out in a circular motion. add some oil on top of the dosa
      4. once the dosa is half cooked, spread the red chutney recipe on top of the dosa
      5. also add in potato masala recipe filling center of the dosa.
      6. finally serve masala dosa hot with coconut chutney and sambar

      preparing the dosa batter:

      7. cover and let the batter ferment for 8-9 hours. if you are staying in cold places then keep in pre-heated oven.

      preparing the masala dosa:

      1. firstly, take required batter in a small bowl. the rest you can store in a airtight container and refrigerate.

      2. and now add salt, sugar and rava to the batter and mix well.

      3. also heat the griddle. smear some oil over the tawa and wipe off with a tissue paper. (do not add oil if using non-stick pan)
      4. furthermore, sprinkle some water and wipe off with wet cloth.

      5. once the tawa is hot; pour a ladleful of batter and spread out in a circular motion. add some oil on top of the dosa

      6. once the dosa is half cooked, spread the red chutney on top of the dosa

      7. finally, add in potato sabzi filling center of the dosa.

      8. roast for 15-30 seconds and fold the dosa into half or roll into circular.
      9. finally, serve masala dosa hot with coconut chutney and sambar

      notes:

      • firstly, dosa batter turns sour after 3 days.
      • in addition, par boiled rice best suits for this dosa. however, you can use sona masuri rice as well. but never try with long grain basmati rice.
      • furthermore, adding butter sure enhances the taste and browning.
      • finally, adding a pinch of sugar helps to get the rich colour to your dosa.

      3. Point no 2 and 3 above and points 2 and 3 with pics are different for methi. Would you pl clarify if Methi to be soaked and ground with rice or with urad?

        • soak the regular rice, chana dal, toor dal and methi in bowl or pan. soak it for 4-6 hours.. I have updated the recipe.. hope there isn’t any more confusion
