there are many versions around the net for the recipe of set dosa, but i have tried the recipe of my home town local hotel recipe i.e guru prasad hotel. set dosa are always on our breakfast menu with variety of chutney. we often try on weekends as this can be a good option for weekend brunch. medu vada also pairs well with set dose or set dosa. set dose are often served with chutney powder.

whenever, we go to bangalore we would never miss the chance of visiting the local sagar restaurants and having set dosa with mix veg sagu. in most of the bangalore restaurants, it is often served with either 2 or 3 sets of small dosa. personally, we love serving the set dosa along with different types of chutney recipes: coconut chutneychanna dal chutneyridge gourd chutney, tomato onion chutneysweet potato chutneypeanut chutney, and red chutney etc.

Ingredients
  • 1 cup dosa rice or sona musuri rice
  • ½ cup paper avalakki / poha / attukulu / aval
  • ¼ cup urad dal / uddina bele / minapa pappu
  • ½ tsp menthe / fenugreek seeds/ menthulu / methi
  • salt as needed
  • oil as needed
Instructions ( 1 cup =255 ml)
how to make dosa batter
  1. soak urad dal, rice and poha in a separate bowl.
  2. combine rice and methi seeds and soak it with enough water for at-least 4 hours. drain the rice along with fenugreek seeds and blend in a mixer. make sure to make a smooth paste using required water only.
  3. drain and add poha to the same blender to make a smooth paste.
  4. grind along with rice batter. do not add any extra water. grind to a smooth thick paste.
  5. transfer the mixture into a deep bowl and keep aside.
  6. drain the urad dal and blend in a mixer. note that urad dal has to be blended separately.
  7. blend to a smooth paste using 3-4 tbsp of water.
  8. transfer the mixture into the same bowl. mix the batter well.
  9. cover and ferment in a warm place for 12 hours. if you live in a warmer place, then your fermentation should take place around 8 hour max. if you live in a place with cold climate you would have to place your vessel with the batter in a warm place. mostly this should be in a pre heated oven (switch off the oven though). it will give enough heat to keep the temperature steady throughout the fermentation period (mostly overnight). this should take about 10-12 hours.
  10. you should see the batter fully fermented and dosa batter should rise in its level.
  11. mix the batter gently.
  12. and now add salt to the batter and mix well.

  4. heat the dosa pan, sprinkle a little water on the tava and wipe it off gently using a tissue.
  5. pour a ladleful of the batter on tava.
  6. and spread it in a circular motion thick circle.
  7. put some oil over it and along the edges. make sure you cook on a medium flame till the dosa turns brown in colour.
  8. cover the dosa for a minute.
  9. after we cover it with a lid, the dosa surface should be cooked.
  10. flip the dosa on the other side to cook.
  11. once done, flip it back again and sprinkle chutney powder or chutney pudi on top of dosa. this step is optional.

notes:

  • firstly, add half teaspoon of sugar if your dosa is not turning golden brown.
  • in addition,  add a pinch of baking soda to make your set dosa more spongy.
  • finally, add some butter or ghee on top dosa if required.

  1. Your recipe is good, but while having set dosas at darshinis, you have a little rubbery texture also to it apart from sponginess, how do we get it. When I made your recipe at home, it came out good. I have heard, they add yeast, rice ganji, how far it is true, i don’t know. Please do provide me how to get that rubberiness also it.
