tomato pulao recipe | tomato bath recipe | south indian tomato rice recipe with step by step photo and video recipe. a simple and flavoured rice or pulao recipe cooked with tomatoes and other vegetables. an ideal recipe for breakfast, lunch, dinner and even for lunch boxes for both working adults and kids. it is typically served with either cucumber raita or tomato raita, but can be eaten as it is.

i have already shared another variety of spicy and easy tomato mixed rice recipe. however this recipe aligns more towards pulao as i have added other vegetables, spices very similar to pulao. both recipes delivers the same taste of tomato flavour and hence i would recommend to try both. also to hasten the process, in this recipe i have prepared tomato pulao in pressure cooker. this recipe can also be prepared by pan frying by mixing the cooked rice with the tomato based sauce.

while the preparation of tomato pulao is extremely simple, but some tips and considerations for a perfect recipe. firstly, i have added other vegetables and pudina leaves + coriander leaves in this recipe. but tomato pulao can also be prepared without these and just with tomatoes. secondly, always use ripe tomatoes for this recipe as it adds sweet and sour taste to tomato pulav. lastly, i have used finely chopped tomatoes in this recipe. however store bought tomato puree can also be used in place of chopped tomatoes.

Ingredients
  • 1 tbsp ghee / clarified butter
  • 1 bay leaf / tej patta
  • 5 cloves / lavang
  • 1 star anise
  • 1 inch cinnamon stick / dalchini
  • 10 whole cashews, halved
  • 1 medium sized onion, thinly sliced
  • 1 tbsp ginger garlic paste / adrak-lasun paste
  • 2 medium sized tomato, finely chopped
  • 1 green chili, slit lengthwise
  • ½ carrot, chopped
  • ¼ cup peas
  • 1 small potato, cubed
  • 5 beans, chopped
  • ½ tsp kashmiri red chili powder / lal mirch powder
  • ¼ tsp turmeric / haldi
  • salt to taste
  • 2 tbsp coriander leaves, finely chopped
  • 2 tbsp pudina / mint, finely chopped
  • 1 cup basmati rice, soaked 20 minutes
  • 1.5 cup water
Instructions ( 1 cup =255 ml)
  1. firstly, in a pressure cooker heat ghee and saute spices, cashews.
  2. also add onions and saute well.
  3. additionally, add ginger garlic paste and chili. saute well.
  4. now add finely chopped tomatoes and saute well.
  5. further add mixed vegetables of your choice.
  6. saute the vegetables for 2 minutes.
  7. also add red chili powder, turmeric, salt, coriander leaves and mint. continue to saute for 2 minutes.
  8. now add basmati rice soaked for 20 minutes.
  9. further add 1.5 cups of water and give a good mix.
  10. cover and pressure-cook for 2 whistles on medium flame.
  11. finally, tomato pulao or tomato bath is ready to serve with raita.

  1. firstly, in a pressure cooker heat ghee and add bay leaf, star, cinnamon stick and cloves.

notes:

  • firstly, always maintain the ratio of rice and water to 1:1.5 or 1:2. to make more moist pulao, add 2 cups of water for 1 cup of rice.
  • furthermore, adding vegetables is optional.
  • additionally, add tomato puree along with chopped tomatoes to make pulao more richer.
  • finally, tomato pulao or tomato bath taste great when served with onion tomato raita.
