as i was trying to explain earlier, there is a love and hate relation to this laddo recipe. particularly in north india, there is a big fan following to this laddu recipe. having said that in south india, some avoid it as they feel it has the same taste of chakli or any deep-fried snacks. even i personally believe that it has a strong smell of chakli or murukku to this laddo. the smell may not be a convincing factor, but trust me the taste would never disappoint you. especially when the fine urad dal is mixed with powdered sugar it yields a unique and satisfying taste. having said that you may feel hard or dry when compared to besan ke laddu which just melts in your mouth. but that is the trademark of this laddo recipe.

furthermore, i would like to highlight some more tips, suggestions and variations to urad dal ladoo recipe. firstly, i had dry roasted the split urad dal even before i started the recipe. you need to be very careful and do not burn it. keep the flame in low and continuously stir it so that it gets roasted evenly. secondly, i have used split urad dal and grounded to a fine powder. you may skip this step and use storebought urad dal powder to hasten the cooking process. lastly, i have decorated the laddo with just raisins and you can use any type of dry fruits. particularly you can use ghee roasted cashew or almonds to top the ladoo.

Ingredients
  

  • cup urad dal
  • ½ cup sugar
  • ½ tsp cardamom powder
  • ¼ cup ghee / clarified butter
  • 2 tbsp raisins / kishmish

Instructions
 

  • firstly, in a pan take 1½ cup urad dal.
  • roast on low flame until the dal turns aromatic.
  • keep roasting the dal for 10 minutes, or until it turns golden brown.
  • cool completely, and transfer to a mixi.
  • blend to fine powder without adding any water.
  • sieve the flour to prevent from any lumps.
  • now in a small mixi, take ½ cup sugar and blend to a fine powder.
  • add in powdered sugar to the same urad dal powder.
  • also, add ½ tsp cardamom powder and mix well making sure everything is combined well.
  • further, take ¼ cup ghee in a saucepan.
  • add 2 tbsp raisins and fry on low flame until raisins puff up.
  • add in fried raisins along with ghee to the same urad dal flour mixture.
  • mix well forming a moist mixture.
  • if the mixture is dry, add a tbsp of more melted ghee. and if the mixture turns watery, then allow to rest for 10 minutes, so it absorbs and thickens.
  • grease hands with ghee and prepare a ball sized ladoo.
  • finally, enjoy urad dal ladoo for 2 weeks when stored in an airtight container.
