i have posted quite a few chaat recipes and i keep getting this request to post a video post with basic chaat chutney recipes. across india, there are different types of chatni used in chaat, but the flavours and taste remain consistent with 3 flavours. the first one is the green chatni which offers the freshness of coriander and mint leaves herbs. it also has the other herbs like ginger and green chillies with a strong punch of sourness in it from the lemon. the second one is the dates and imli chutney recipe which is itself a combination of sourness and sweet taste in it. lastly the most popular is the lethal red chatni recipe. it is known for its strong spice flavour with a strong dosage of garlic flavour in it.
furthermore, some important and critical tips, suggestions and variations to basic chaat chutney recipes. firstly, for the red chutney, use kashmiri chillies and avoid byadigi red chillies. kashmiri chillies give you bright red colour and also offers less spice heat. secondly, while preparing the green chutney, add a small amount of water and add it in small batches. it has to be thick in consistency but not watery. the consistency part holds good for all the chutney mentioned in this post. lastly, the imli chutney has to be boiled thoroughly with jaggery and there is no shortcut for it. otherwise, the chutney may taste raw with a pungent smell of tamarind.

Ingredients
for dates tamarind chutney / imli chutney:
- 60 grams tamarind
- 60 grams dates, pitted
- 60 grams jaggery
- 3 cup water
- 1 tsp fennel powder
- ¾ tsp chilli powder
- ½ tsp coriander powder
- 1 tsp cumin powder
- ½ tsp ginger powder
- ½ tsp salt
for green chutney:
- 2 cup coriander
- 1 cup mint / pudina
- 3 clove garlic
- 2 chilli
- 1 inch ginger
- 1 tsp cumin powder
- ¾ tsp chaat masala
- 2 tbsp lemon juice
- 1 tbsp putani / roasted gram dal
- ½ cup water
- ½ tsp salt
for red garlic chutney:
- 15 dried red chilli, seedless
- 2 cup hot water
- 10 clove garlic
- 1 inch ginger
- ½ tsp cumin powder
- 1 tsp chaat masala
- 1 tsp sugar
- 2 tbsp lemon juice
- ½ tsp salt
- ½ cup water
Instructions
tamarind chutney preparation:
- firstly, in a large kadai take 60 grams tamarind, 60 grams dates and 60 grams jaggery.
- add 2 cup water, cover and boil for 10 minutes.
- now cool completely, and transfer to the blender.
- blend to smooth paste adding water if required.
- pass the mixture through a sieve to separate the skin.
- transfer the dates tamarind mixture to a large kadai.
- add 1 cup water and mix well adjusting consistency as required.
- further, add 1 tsp fennel powder, ¾ tsp chilli powder, ½ tsp coriander powder, 1 tsp cumin powder, ½ tsp ginger powder and ½ tsp salt.
- mix well and boil for 2 minutes.
- finally, dates tamarind chutney is ready to enjoy for 2 weeks when stored in the refrigerator.
green chutney preparation:
- firstly, in a small blender take 2 cup coriander, 1 cup mint, 3 clove garlic, 2 chilli and 1 inch ginger.
- add 1 tsp cumin powder, ¾ tsp chaat masala, 2 tbsp lemon juice and 1 tbsp putani.
- now add ½ cup water, ½ tsp salt and blend to smooth paste.
- finally, green chutney is ready to enjoy for a week when stored in the refrigerator.
red garlic chutney preparation:
- firstly, soak 15 dried red chilli in 2 cup hot water for 15 minutes.
- drain off the water and transfer to the blender.
- add 10 clove garlic, 1 inch ginger, ½ tsp cumin powder, 1 tsp chaat masala, 1 tsp sugar and 2 tbsp lemon juice.
- now add ½ tsp salt and ½ cup water. blend to smooth paste.
- finally, red garlic chutney is ready to enjoy for a week when stored in the refrigerator.

- firstly, make sure to adjust the sweetness in tamarind chutney by adding more jaggery or dates.
- also, deseeding the chilli will help to reduce the spiciness.
- additionally, using fresh herbs helps to give to freshness to green chutney.
