spring roll noodles recipe | how to make noodles spring roll recipe with detailed photo and video recipe. a popular deep fried appetizer / snack food or a kind of dim sum from the south east asian cuisine. basically the sauteed vegetables and noodles are sauteed and stuffed inside a rice based spring roll wrapper and deep fried till crisp. in india, spring roll is a popular street food and is mainly served with sweet chilly sauce.
in my previous post of authentic veg spring roll recipe, i have prepared it with only veggies with cabbage as main ingredient. however in this noodles spring roll recipe, i have added rice vermicelli noodles and it is one of the main ingredients. basically the noodles spring roll recipe is very common in thai and malaysian fine dine restaurants. most commonly it is either served with sweet chilli sauce or with spicy red chilli sauce with some salads. i personally like it with spicy sauce but my husbands prefers the other way with sweet chilli sauce.
while it does not have any complicated steps in this recipe yet i would like to share few tips and recommendations for a crisp spring roll noodles recipe. firstly, i would heavily recommend to use thin and fine rice noodles for this recipe. it would help will rolling and more importantly deep frying. secondly, i have used a store bought spring roll sheets in this recipe. you should be able to find it in any local super market freezing section. alternatively, you can also use left over chapathi and spring roll sheets. lastly, deep fry them in a medium heat oil for better results.

Ingredients
- 1 pack vermicelli noodles
- 2 tsp oil
- 2 clove garlic, finely chopped
- 1 cup carrot, shredded
- 2 tbsp spring onion, chopped
- 2 cup cabbage, shredded
- ¼ tsp sugar
- 2 tsp soy sauce
- ½ tsp salt
- 7 spring roll sheets
- ½ tsp pepper, crushed
- 1 tsp corn flour
- 2 tbsp water
- oil for deep frying
Instructions
- in a large kadai heat 2 tsp oil and saute 2 clove garlic and 2 tbsp spring onion.
- further add 2 cup shredded cabbage and 1 cup shredded carrot.
- saute well till the vegetables shrink without over cooking.
- now add 2 tsp soy sauce, ¼ tsp sugar, ½ tsp salt and ½ tsp pepper. saute on high flame.
- add in vermicelli noodles draining off the water.
- further, pour corn flour slurry.
- saute on high flame till the mixture turns sticky.
- take a spoonful of prepared stuffing and place on spring roll sheet.
- spread the stuffing in elongated shape. pull and fold over the corner tightly till it reaches half the sheet.
- furthermore, fold over sides like a envelope leaving no air pockets or space as they absorb oil.
- create crease and roll further.
- apply maida paste around the corners and seal the edges.
- furthermore, deep fry the spring roll or bake them at 200 degree c for 10 mins.
- finally, serve veg spring roll noodles hot with sweet chilli sauce or tomato sauce.
how to make noodles spring roll with step by step photo:
- firstly, in a large bowl break 1 pack vermicelli noodles and soak in hot water for 10 minutes or as per the instruction on packet of noodles. keep aside.
- in a large kadai heat 2 tsp oil and saute 2 clove garlic.
- also saute 2 tbsp spring onion.
- further add 2 cup shredded cabbage and 1 cup shredded carrot.
- saute well till the vegetables shrink without over cooking.
- now add 2 tsp soy sauce, ¼ tsp sugar, ½ tsp salt and ½ tsp pepper. saute on high flame.
- add in vermicelli noodles draining off the water.
- mix well without breaking the noodles.
- further, prepare corn flour slurry by mixing 1 tsp corn flour and 2 tbsp water without forming any lumps.
- saute on high flame till the mixture turns sticky. allow to cool completely and the stuffing is ready.
- meanwhile, take spring roll pastry sheet and place corner towards you. or in a diamond shape.
- take a spoonful of prepared stuffing and keep at the corner near you.
- spread the stuffing in elongated shape. pull and fold over the corner tightly till it reaches half the sheet.
- furthermore, fold over sides like a envelope leaving no air pockets or space as they absorb oil.
- create crease and roll further.
- apply maida paste around the corners and seal the edges. to prepare maida paste mix 1 tbsp of maida with 3 tbsp of water.
- roll tight making sure spring role has secured well.
- furthermore, deep fry the spring roll or bake them at 200 degree c for 10 mins.
- deep fry till they turn golden brown stirring occasionally.
- once they turn golden brown, drain them over absorbent paper.
- finally, serve veg spring roll noodles hot with sweet chilli sauce or tomato sauce.
notes:
- firstly, i have used store brought spring roll sheets, however you can prepare in home. refer onion samosa recipe for homemade spring roll sheets.
- also, vary the stuffing to your choice.
- additionally, make sure to roll tight without any gap, else oil penetrates inside.
- finally, veg spring roll noodles taste great when served hot.
