It strongly resembles a glazed doughnut but varies with its layered texture and crunchy taste. In North India, it is known as Balushahi; in South Indian cuisine, it is known as Babushka or Badshah.

Later, the dough is shaped into small, flat balls and deep-fried in clarified butter. Finally,ย it is dipped in a sugar syrup to form a crystal sugar coating.
There are several variations to the traditionalย Balushahi or badusha recipe, but I have shared the most common version. In my native language, it is commonly known as Badshah or status, and it has a thick sugar coating on the bottom side. The top layer has a thin layer of sugar coating with a smooth surface. Inside, it has a rough, flaky texture with some random sweet contents. However, in this recipe ofย Badhusha sweet, I have made a dent at the centre with evenly coated sugar syrup. Also, the dent is either filled with dry fruits or can also be filled with rabdi or rabri. Further, the latter variation is best served when it is warm.
Here are some essential tips and suggestions for a perfect flaky Balushahi or badusha recipe. Firstly, kneading the dough lightly is very critical for this recipe. Make sure not to knead the dough and combine it like preparing for Nankhatai. Secondly, while frying the Badhusha sweet, make sure the flame is in low heat.ย Also, I would recommend using ghee or clarified butter instead of oil for deep frying. Lastly, the consistency of sugar syrup defines the texture of badusha sweet.ย It can be thin, like gulab jamunโs sugar syrup, or hard crystallised, forming a thick layer on top of badusha.

It is a popular North Indian sweet dessert known for its creamy, decadent, flaky texture dipped in sugar syrup. Balushai or Badusha sweet has its roots in the Mughal empire; hence, the name has Badsha, which means emperor. In other words, it can also be referred to as the king of all Indian sweets and hence has the name. It is most commonly prepared during the festival seasons and is typically ready to share with friends and family members.
There are many ways to make Balushahi or Badusha sweet, but maida or plain flour are the most common. The significant variant is introduced with the consistency and application of sugar syrup. It can be poured with a thin sugar syrup consistency or made with thick sugar syrup crystals. It can also be made with wheat flour but may not get the same texture and taste. In addition, it can be made with jaggery syrup, which makes it a healthy alternative.

Balushahi Recipe | Badusha Sweet - Halwai Style
Ingredients
!for dough:
- 2 cup maida
- 1 tsp baking powder
- ยผ tsp salt
- ยผ cup ghee
- water, for kneading
- oil, for frying
!for sugar syrup:
- 2 cup sugar
- ยฝ cup water
- few saffron
- 4 pods cardamom
- pinch saffron food colour
Instructions
- Firstly, in a large mixing bowl take 2 cup maida, 1 tsp baking powder, ยผ tsp salt, and ยผ cup ghee.
- Crumble and mix well making sure the flour is moist.
- Now add cup water and start to make dough without kneading.
- Cover and rest for 30 minutes.
- Meanwhile, to prepare sugar syrup, take in 2 cup sugar and ยฝ cup water.
- Also add few thread saffron, 4 pods cardamom and mix well.
- Further, boil for 5 minutes or till sugar syrup turns slightly sticky. If you are looking for more sweet badushahi then get to 1 string consistency sugar syrup.
- Add a pinch of saffron food color and mix well. Sugar syrup is ready, cover and keep aside.
- After the dough has rested for 30 minutes, slightly knead the dough.
- Pinch a small ball-sized dough and make a ball.
- Make a hole at the center with the help of a finger.
- deep fry in warm hot oil on low flame till the balls turn golden brown and crisp.
- Drop them into warm sugar syrup immediately.
- Coat the badhusha with sugar syrup on both sides and soak for 5 minutes.
- Finally, serve Balushahi Recipe or Badusha Recipe garnished with silver vark or few chopped cashews.

- Firstly, do not knead the dough as the flakiness of balushahi will be lost.
- Also, adding pinch of salt enhances the sweetness.

- Finally, increase the sweetness of Balushahi Recipe or Badusha Recipe by preparing a string of consistency sugar syrup.

I tried this recipe yesterday. The badusha was soft inside, and not flaky like how I have eaten it as made by the traditional sweet meat guys. Did I do something wrong? Or is that the way it is meant to be?
nope… badushahi turns to be flaky inside…make sure to fry on low flame, else it doesnt turn to be flaky

Hi Archana, I follow your recipes in youtube regularly. I made a lot of recipes of yours especially tge instant zalebi turned out very well. Today I tried badusha… but while frying they puffed a lot and they almost turned out like laddus. Taste is not ok.
