i have made and posted quite a few dessert recipes till now on my blog, but royal falooda recipe is the simple and tasty dessert recipe out of all. period! needless to say that it does not need any complicated ingredients and are made with basic ones. moreover, the ideal part of this dessert recipe is to pre-make the ingredients and assemble it whenever required. this makes it a more friendly dessert recipe for all type of cooks. i personally end up making this dessert whenever i invite my friends and family for lunch and dinner. i have never been disappointed with this recipe and neither my guests too. in addition, you can experiment this recipe with other ice cream flavours or kulfi to make falooda kulfi and to make it even more interesting.
furthermore, i would like to touch on some tips, suggestions, variations to this rich and creamy royal falooda recipe. firstly, as i mentioned previously, it is always recommended to make required ingredients well ahead in advance. this will not also save your time, but also make it more effective and flavoured. secondly, the assembling part of falooda desert depends upon the size of the glass. so add your ingredients according to the size of it. if you have a lengthy glass or big glass, you may to add more full cream milk to make it full. lastly, i have added vegetarian gelly for this recipe made with agar agar. but if you are comfortable with gelatine based gelly, you can add those as an alternative.

Ingredients
- 1 tbsp sabja seeds / falooda seeds / basil seeds / tukmaria
- ½ cup falooda sev
- 4 cup milk
- 3 tbsp sugar
- ¼ cup rooz afza / rose syrup
- 1 cup strawberry gelly, vegetarian
- 2 scoop vanilla ice cream
- 2 tbsp tutti frutti
- 2 tbsp nuts, chopped
- 2 cherry
Instructions
- in a tall glass add 2 tbsp rooh afza.
- further add 2 tbsp soaked sabja seeds.
- now add 2 tbsp cooked falooda sev.
- pour 1 cup of chilled milk and stir gently.
- drop 2 tbsp of gelly without spilling.
- add in a scoop of vanilla ice cream.
- further top with 1 tsp of tutti frutti, 1 tsp chopped nuts.
- drizzle 1 tbsp of rooh afza and top with a cherry.
- finally, enjoy royal falooda chilled.
how to make falooda with step by step photo:
- firstly, soak 1 tbsp sabja seeds in a cup of water for 30 minutes.
- soak until sabja seeds absorb water and sweets turning into jelly texture.
- now to prepare falooda sev boil 2 cup water with 1 tbsp sugar.
- add ½ cup falooda sev and stir well. falooda sev is prepared with corn flour.
- boil for 3 minutes or until sev softens.
- drain off the sev and rinse with cold water to stop cooking process.
- now to prepare milk take 4 cup milk in a large kadai and boil for low to medium flame.
- boil for 10 minutes or until milk thickens slightly.
- further add 2 tbsp sugar and stir well until sugar dissolves.
- cool the milk to room temperature and chill it completely.
- to prepare falooda, in a tall glass add 2 tbsp rooh afza.
- further add 2 tbsp soaked sabja seeds.
- now add 2 tbsp cooked falooda sev.
- pour 1 cup of chilled milk and stir gently.
- drop 2 tbsp of gelly without spilling.
- add in a scoop of vanilla ice cream.
- further top with 1 tsp of tutti frutti, 1 tsp chopped nuts.
- drizzle 1 tbsp of rooh afza and top with a cherry.
- finally, enjoy royal falooda chilled.
notes:
- firstly, prepare the serving glass just before serving as the ice cream melts.
- also, add chopped fruits and nuts to make falooda richer and nutritious.
- additionally, if you do not have access to falooda sev then use vermicelli.
- finally, royal falooda recipe tastes great when good quality rooh afza is used.
