aloo kachori recipe | aloo ki kachori recipe | potato stuffed kachori with detailed photo and video recipe. yet another variation to the popular kachori recipe prepared with spicy potato masala stuffing. an ideal evening snack recipe or also can be served as breakfast recipe with dhokla, jalebi or malpua. the recipe is very similar to the traditional khasta kachori or dal kachori with stuffing from potato masala or aloo masala.
i have share quite a few variety of kachori recipe till now but aloo kachori recipe is my new favourite recipe. i personally love the crisp layered texture of the kachori with the aloo masala or potato masala. the best part of this recipe is the same dough and stuffing can be easily extended to aloo samosa or party samosa recipe. hence i make sure to keep the dough ready and prepare either one of them especially for surprised guests. moreover the potato stuffed kachori’s can be easily extended to kachori chaat which even tastes great than any other kachori’s. perhaps it is because of the potato masala used in the stuffing and it enhances the taste.
furthermore, some important tips, variations and serving suggestion for aloo ki kachori recipe. firstly, i have added ghee or clarified butter to all purpose flour or maida even before kneading it. also i have crumbled the flour with ghee so that the kachori’s turn flaky and crisp. secondly fry the kachori’s on a low to medium flame similar to samosa’s or any other kachori recipe. note that the stuffing and the inner layer has to be cooked evenly and the same cannot be achieved with high flame. lastly the kachori’s can be served as it is but tastes great when served with the combination of mint chutney and sweet tamarind chutney.

Ingredients
for dough:
- 2 cup maida / plain flour / all purpose flour / refined flour
- 1 tbsp rava / semolina / suji
- ½ tsp salt
- 3 tbsp ghee / clarified butter
- ¾ cup water
- oil for deep frying
for stuffing:
- 2 tsp oil
- 1 tsp cumin / jeera
- 1 tsp coriander seeds, crushed
- ½ tsp fennel / saunf
- 2 green chilli, finely chopped
- ½ tsp ginger paste
- ¼ tsp turmeric / haldi
- pinch of hing / asafoetida
- ½ tsp kashmiri red chilli powder
- ½ tsp garam masala
- 2 potato, boiled & mashed
- ½ tsp aamchur / dry mango powder
- ½ tsp salt
Instructions
- firstly, prepare the kachori dough and rest for 20 minutes.
- prepare the stuffing by heating 2 tsp oil, 1 tsp cumin, 1 tsp coriander seeds and ½ tsp fennel. saute till it turns aromatic.
- now add 2 green chilli, ½ tsp ginger paste and saute for 30 seconds.
- keeping the flame on low, add spices and saute.
- now add 2 boiled potato and mashed potato, ½ tsp salt and mix well.
- aloo stuffing is ready.
- now pinch a small lemon sized ball and flatten it.
- now scoop 2 tsp of prepared aloo stuffing and place in the centre.
- get the edges together and form a bundle.
- close the top by pressing and flattening.
- furthermore, gently press the edges and flatten to form a poori size.
- when the oil is medium hot, add prepared kachori and fry.
- finally, serve aloo kachori as it is or with green chutney and fried chilli.
how to make aloo kachori recipe with step by step photo:
- firstly, prepare the dough by taking 2 cup maida, 1 tbsp rava, ½ tsp salt and 3 tbsp ghee.
- crumble and mix well making sure the dough holds shape.
- in addition, add water little by little and knead.
- knead well till you form a smooth and soft dough.
- furthermore, cover with moist cloth and keep aside for 20 minutes.
- prepare the stuffing by heating 2 tsp oil, 1 tsp cumin, 1 tsp coriander seeds and ½ tsp fennel. saute till it turns aromatic.
- now add 2 green chilli, ½ tsp ginger paste and saute for 30 seconds.
- keeping the flame on low, add ¼ tsp turmeric, ½ tsp red chilli powder, ½ tsp garam masala, ½ tsp aamchur and pinch of hing.
- saute on low flame till it turns aromatic.
- now add 2 boiled potato and mashed potato, ½ tsp salt and mix well.
- aloo stuffing is ready. allow to cool completely.
- now pinch a small lemon sized ball and flatten it.
- now scoop 2 tsp of prepared aloo stuffing and place in the centre.
- get the edges together and form a bundle.
- close the top by pressing and flattening.
- furthermore, gently press the edges and flatten to form a poori size.
- when the oil is medium hot, add prepared kachori.
- do not touch it for a minute or till they float. then press with the spoon to puff up. turn around and fry the kachori till it turns golden brown all over.
- finally, serve aloo kachori as it is or with green chutney and fried chilli.
notes:
- firstly, fry aloo kachori on medium flame else they will not be crispy.
- furthermore, you can use rolling pin to flatten kachori.
- additionally, you can alter the filling according to your preference.
- moreover, kachori are perfect when oil / ghee is added while kneading dough.
- finally, you can store these in a airtight container and prepare aloo kachori chat.

stays good for 2-3 days as aloo is used
I made the kachori by baking them in the oven. It took a slightly more time than mentioned. The final product was a bit hard, but it was a good try.
