aloo puff recipe | aloo patties puff | potato patties – homemade sheets with step by step photo and video recipe. puff recipes are one of the popular tea-time snacks across india and are served in many flavours. however, it is always prepared and served in a bakery and less likely prepared at home assuming it could be tricky to prepare. hence to prove that myth wrong, i am showing a simple and easy potato-based puff recipe known as aloo patties puff.

i have always been a huge fan of patties or puff recipes or specifically snacks from bakeries. i developed the taste during my college days and i was regularly having it during my college breaks or in the evening with my regular friends. honestly, i never had a clue during those days on how these patties are made and more importantly never bother to discover it. even though i was super critical about the taste and i was particular with a few bakeries only. today with this blog, i realise how these bakery items are prepared and more importantly have the confidence to prepare these at home. especially during these uneven pandemic times, it is always good to prepare these at home and enjoy these snacks with friends and family.

furthermore, some more additional tips, suggestions and variants to the aloo puff recipe. firstly, the stuffing is prepared using only boiled and mashed potatoes. the same recipe can also be prepared using mixed vegetable-based puff patties too. as matter of fact, you may also prepare paneer or tofu-based patties too. secondly, you may prepare these crispy munching snacks using store-bought puff pastry sheets too. this would drastically save your cooking time and also be a much easier option. lastly, you may also bake these or even shallow fry instead of deep-frying for a healthier option.

Ingredients
  

for dough:

  • 3 cup wheat flour
  • ½ tsp salt
  • 2 tbsp oil, hot
  • water, for kneading

for stuffing:

  • 2 tbsp oil
  • 1 tsp cumin
  • ½ onion, finely chopped
  • 1 tsp ginger garlic paste
  • 1 carrot, finely chopped
  • 1 capsicum, finely chopped
  • ¼ tsp turmeric
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • ½ tsp coriander powder
  • ½ tsp salt
  • 4 potato, boiled & mashed
  • 2 tbsp coriander, finely chopped

Instructions
 

how to knead the dough:

  • firstly, in a large bowl take 3 cup of wheat flour and ½ tsp salt. mix well.
  • add 2 tbsp hot oil and mix well. adding hot oil gives nice crispiness to the puff.
  • crumble and mix forming a moist flour.
  • now add water as required and start to knead the dough.
  • knead to a smooth and tight dough.
  • cover and rest for 20 minutes.

how to prepare aloo stuffing:

  • firstly, in a large kadai heat 2 tbsp oil and splutter 1 tsp cumin.
  • add ½ onion, 1 tsp ginger garlic paste and saute until the onions soften.
  • now add 1 carrot, 1 capsicum and saute for a minute.
  • also add ¼ tsp turmeric, 1 tsp chilli powder, 1 tsp garam masala, ½ tsp coriander powder and ½ tsp salt.
  • saute on low flame until the spices turn aromatic.
  • further, add 4 potatoes and mix well.
  • mash the potato smooth until it is well combined with the spices.
  • also, add 2 tbsp coriander and mix well. the potato stuffing is ready.

how to shape and fry the puff:

  • after the dough has rested for 20 minutes, knead slightly and pinch a ball sized dough.
  • dust with wheat flour and roll to slightly thick thickness.
  • cut into a rectangle shape using a cookie cutter or knife.
  • now place a small ball sized aloo stuffing in the centre.
  • fold into half and press with fingers to seal.
  • also using a fork to seal the sides tightly. if you feel the dough is not sticking, then you can rub few drops of water.
  • now deep fry in hot oil keeping the flame on low.
  • stir occasionally, and fry on low flame until the puff turns golden brown and crisp.
  • drain off over kitchen towel to absorb excess oil.
  • finally, enjoy aloo puff with tomato sauce as evening tea-time snacks.
