Aloo Tikki Recipe | Aloo Ki Tikki | Aloo Patties | Potato Tikki with step-by-step photo and video recipe. Potato, or aloo, is a versatile vegetable that can be used in many recipes. Generally, the larger subset of recipes made with potatoes is snacks or finger foods, given the vegetable’s nature. One such snack recipe is the aloo tikki or patties recipe, known for its crisp, crunchy flavour.

I am a huge fan of potato recipes. Be it a simple chip, a French fry, or a bit more complicated recipe like potato nuggets or even potato bites. At the same time, there are quite a few desi snacks made with aloo. And aloo tikki should be the most popular dish made from it. The best part of aloo ki tikki is its versatility. I personally like it topped with ragda curry as a ragda patties recipe. But it can be a good foundation for many other recipes. particularly when stuffed between bread or a burger, it just elevates it to the next level. I make these burger-sized patties well in advance and freeze them so that I can use them whenever I need them. Even you guys can do the same thing.

Furthermore, some easy and important tips, suggestions, and variations for a perfect, crisp, and tasty aloo tikki recipe. Firstly, you need to be very careful while boiling the potatoes. You can use a pressure cooker to boil these, but it has to be removed from the water immediately after the pressure is released. otherwise the potatoes may absorb water and may not attain the tikki shape. Secondly, I have added corn flour, which should bind the veggies together. The same can be done with bread crumbs, cornflakes, or oat powder, too. Lastly, I have shallow-fried these patties for less oil consumption. Alternatively, you can deep-fry for a crisper texture and better flavour.

About Aloo Tikki

The classic Aloo Tikki recipe is an authentic representation of Indian street food culture. The street vendors who sold crispy potato patties created this simple snack, which originated from their work. The tikki evolved into a popular ingredient used by food vendors to create multiple chaat dishes, which they served in markets and street food outlets. The vendors create modern street food recipes by using it as a filling for their sandwiches and burger patties. The dish provides a comforting experience through its combination of a crispy outer crust and a soft mashed potato filling. The potato mixture includes spices which create a hot flavour and enhance taste complexity. Street vendors usually cook the patties on large iron tawas that add a smoky aroma. The golden crust develops while the interior maintains its soft texture and delicious taste.

The special element of this recipe is its unique stuffing, which chefs add to their potato patties. Many people prepare it simply without stuffing for a quick version. The tikki becomes more delicious when chefs create its filling with lentils, crushed cashews, and paneer. The stuffed centre delivers a delightful surprise which reveals itself during every mouthful. The various serving methods improve both the flavour and visual appeal of the dish. The cooks use green chutney and spicy red garlic chutney to top the mashed tikki before presenting it. These condiments enhance flavour and add a vibrant street style touch. The patties are suitable for snacking, including chaats, sandwiches, and burgers. The aloo tikki’s adaptability across various cooking methods keeps it popular as a street food option.

Fun Fact:

In many Indian cities, street vendors cook aloo tikki on massive flat iron pans and serve hundreds of patties in a single evening during busy market hours.
