i am a huge fan of potato recipes. be it a simple, chips, french fries or a bit more complicated recipes like potato nuggets or even potato bites. at the same time, there are quite a few desi snacks made with aloo. and aloo tikki should be the most popular one made out of it. the best part of aloo ki tikki is the versatility of it. i personally like to have it with a topping of ragda curry as a ragda patties recipe. but it can be a good foundation for many other recipes. particularly when stuffed between bread or burger, it just elevates it to the next level. i make these burger sized patties well ahead in advance and freeze it so that i can use it whenever i need it. even you guys can do the same thing.
furthermore, some easy and important tips, suggestions and variations for a perfect crisp and tasty aloo tikki recipe. firstly, you need to be very careful while boiling the potatoes. you can use a pressure cooker to boil these but has to be removed from water immediately the pressure is released. otherwise the potatoes may absorb water and may not attain the tikki shape. secondly, i have added corn flour which should bind the veggies together. the same can be done with bread crumbs, corn flakes or oats powder too. lastly, i have shallow fried these patties for less oil consumption. alternatively you can also deep fry for a better crisp and also taste.

Ingredients
- 3 potato / aloo, boiled & grated
- 1 chilli, finely chopped
- 1 tsp ginger garlic paste
- ¼ tsp turmeric
- ½ tsp kashmiri red chilli powder
- ½ tsp cumin powder / jeera powder
- ½ tsp aamchur / dry mango powder
- ½ tsp chaat masala
- ½ tsp salt
- 2 tbsp mint / pudina, chopped
- 2 tbsp coriander, chopped
- 2 tbsp corn flour
- oil, for frying
Instructions
- firstly, in a large mixing bowl take 3 boiled and grated potato. make sure to pressure cook potatoes for 4-5 whistles and drain off the water as soon as pressure releases.
- add 1 chilli, 1 tsp ginger garlic paste, ¼ tsp turmeric and ½ tsp chilli powder.
- also add ½ tsp cumin powder, ½ tsp aamchur, ½ tsp chaat masala and ½ tsp salt.
- further add 2 tbsp mint and 2 tbsp coriander.
- now add 2 tbsp cornflour and mix well alternatively use poha powder or rice flour as it helps to absorb moisture.
- mix well forming a soft dough.
- grease hand with oil and prepare ball-sized tikki.
- shallow fry in hot oil. you can alternatively roast or deep fry.
- roast on low flame until it turns golden brown.
- flip over and cook on both sides.
- finally, enjoy aloo tikki with green chutney, tamarind chutney or prepare aloo tikki chaat.
