for chana chaat:

  • 1 cup chana, soaked
  • ½ tsp turmeric
  • ½ tsp chilli powder
  • ½ tsp salt
  • 2 cup water
  • 2 tsp oil
  • 2 tbsp onion, chopped
  • 2 tbsp tomato, chopped
  • ½ tsp cumin powder
  • ½ tsp chilli powder
  • ¼ tsp turmeric
  • ½ tsp aamchur
  • ½ tsp garam masala
  • ½ tsp salt
  • 1 tbsp green chutney
  • 1 tbsp tamarind chutney
  • 2 tbsp curd
  • 2 tbsp onion, chopped
  • 1 tbsp tomato, chopped
  • ½ tsp chaat masala

for papdi:

  • 2 cup maida
  • ½ tsp salt
  • ¼ tsp ajwain

How to make Chole Papdi Chaat with step-by-step photos:

how to make papdi:

  1. firstly, in a large bowl take 2 cup maida, ½ tsp salt, ¼ tsp ajwain.
  2. add 2 tbsp kasuri methi and 2 tbsp ghee.
  3. crumble and mix forming a moist flour.
  4. add water as required and knead to a smooth dough.
  5. roll the dough into a slightly thick thickness.
  6. cut into shape of your choice.
  7. deep fry on medium flame until the papdi turns crispy and golden brown.
  8. drain off the papdi and can be used to make chaat.

how to make chana chaat:

  1. to prepare chaana, in a cooker take 1 cup chana, ½ tsp turmeric, ½ tsp chilli powder, ½ tsp salt and 2 cup water.
  2. pressure cook for 5 whistles or until the chana is cooked well.
  3. drain off the chana and keep it aside.
  4. in a pan heat 2 tsp oil. add 2 tbsp onion and 2 tbsp tomato. saute until the tomato softens.
  5. further add ½ tsp cumin powder, ½ tsp chilli powder, ¼ tsp turmeric, ½ tsp aamchur, ½ tsp garam masala and ½ tsp salt.
  6. saute on low flame until the spices turn aromatic.
  7. transfer the masala chana to the bowl.
  8. add 1 tbsp green chutney, 1 tbsp tamarind chutney and 2 tbsp curd.
  9. also add 2 tbsp onion, 1 tbsp tomato, ½ tsp chaat masala and break few papdi.
  10. mix well making sure everything is well combined.
  11. to prepare the chaat, plate the prepared chaat into the plate.
  12. top with curd, tamarind chutney, green chutney, onion and tomato.
  13. also add boondi, sev and coriander.
  14. finally, enjoy chana papdi chaat with hot cutting chai.

  • Firstly, make sure to prepare the spiced chana spicy, else the chaat will not taste great.
  • Also, the papdi need to be fried on medium flame to stay crunchy for long time.
