the recipes for date walnut cake is extremely simple, yet some tips and suggestions while baking it. firstly, in this recipe, i have used wheat flour which brings the healthy alternative to this recipe. but if you need an authentic taste, use plain flour or also known as maida flour. secondly, i have added olive oil as a replacement to butter while preparing the cake batter. adding butter makes it more flavoured but hardens when cooled. hence you may have to warm it before serving to make it soft. lastly, you can experiment the recipe by adding dry fruits or even grape/wine juices. this should make it very similar to the christmas fruit cake.

Ingredients
for soaking:
- 2 cup (300 gm) dates / khajur
- 1 cup (255 ml) milk, hot
for cake batter:
- ¾ cup (190 ml) olive oil
- ¼ cup (60 ml) curd / yogurt
- 2 cup (260 gm) wheat flour / atta
- 1 tsp baking powder
- ½ tsp baking soda
- ½ cup milk
- ½ cup (60 gm) walnuts
- 5 dates / khajur, chopped
Instructions
- take the blended dates paste in a large mixing bowl.
- add in ¾ cup olive oil and ¼ cup curd.
- blend well until the mixture is well combined.
- place the sieve and add 2 cup wheat flour, 1 tsp baking powder and ½ tsp baking soda.
- blend and mix well until the mixture is combined.
- further, add ½ cup walnuts and 5 dates.
- mix by combining using the cut and fold method.
- transfer the batter to the cake tray or bread mould.
- pat the tray twice to remove the air incorporated into the batter.
- top with more walnuts to make it look more attractive.
- place the cake tray into the preheated oven. bake the cake at 180 degree celsius or 356 degrees fahrenheit for 45 minutes.
- finally, serve the dates cake or store in an airtight container.
how to make date cake with step by step photo:
- firstly, in a small bowl take 2 cup dates and soak in 1 cup milk for 30 minutes.
- blend to smooth paste adding milk as required.
- now take the blended dates paste in a large mixing bowl.
- add in ¾ cup olive oil and ¼ cup curd.
- blend well until the mixture is well combined.
- place the sieve and add 2 cup wheat flour, 1 tsp baking powder and ½ tsp baking soda.
- blend and mix well until the mixture is combined.
- add ½ cup milk and prepare a smooth cake batter.
- further, add ½ cup walnuts and 5 dates.
- mix by combining using the cut and fold method.
- do not over mix, as the cake will turn rubbery.
- transfer the batter to the cake tray or bread mould. make sure to grease the mould and place a butter paper at the bottom to avoid sticking. i have used bread loaf pan from smith+nobel – 21x11cm.
- pat the tray twice to remove the air incorporated into the batter.
- top with more walnuts to make it look more attractive.
- place the cake tray into the preheated oven. bake the cake at 180 degree celsius or 356 degrees fahrenheit for 45 minutes.
- or bake till the toothpick inserted comes out clean.
- further, allow the cake to cool completely and later cut into thick slices and serve.
- finally, serve the dates cake or store in an airtight container.
notes:
- firstly, use butter / any neutral flavoured oil if you do not want to use olive oil.
- also, if you prefer more sweetness the add ¼ cup of brown sugar/sugar.
- additionally, adding dry fruits are to your choice.
- furthermore, if you are vegan then replace curd with water and add 1 tsp vinegar.
- finally, dates cake recipe is healthy can be had for morning breakfast.
