filter coffee recipe | filter kaapi recipe | south indian filter coffee with detailed photo and video recipe. a unique south indian variation to the popular coffee beverage made with special brewed coffee powder. it is basically known for its strong coffee flavour and aroma with a hint of sweetness in it. in south india, it is generally served in the morning with or without breakfast, but can be served at any point of the day.
i am a big-time coffee drinker. especially after landing in australia, my love for coffee’s has increased further. this is mainly due to the range of coffee variations available here. i personally have nespresso coffee machine next to my work table and i drink it more often. even after these options, i ensure to have one dosage of filter coffee every day. it is generally the first thing i make it in the morning. having said that, my husband is completely opposite when it comes to morning beverage. he just needs one cup of tea (preferably masala chai) with his morning breakfast. that’s it for his entire day. even though we hail from the same location, we have different taste and choice in terms of food and beverage.
anyway, i would like to add some more tips, suggestions and variations to south indian filter coffee. firstly, the coffee powder is important and unique to this recipe. you cannot use instant or smooth textured coffee powder for this recipe. perhaps, you can use coffee grounding machine to ground coffee beans and use it for this recipe. secondly, once the hot water is added, it has to be rested for a minimum of 30 mins. ideally, you can keep it overnight and use it in the early morning. lastly, you may increase or decrease the coffee powder quantity and hot water as per your taste. for instance, if you need a strong coffee, you may add 1 tbsp extra on top of what i have shown in this recipe post.

Ingredients
for decoction:
- 1½ cup water
- 3 tbsp coffee powder
for coffee:
- 1½ cup milk
- 4 tsp sugar
Instructions
- firstly, take a coffee filter of 5-6 serves. it consists of 2 cylindrical vessels (bottom one for collecting brewed coffee decoction and the top one with perforated holes for adding ground coffee powder), pressing disk and a lid.
- add in 3 tbsp of filter coffee powder / ground coffee into the perforated vessel. add more coffee powder, for strong coffee.
- press tightly with the help of pressing disk.
- boil 1½ cup of water and pour slowly into the top vessel covering almost full.
- cover with the lid and rest for 30 minutes without disturbing.
- after 30 minutes, the decoction would have collected at the bottom of the vessel.
- pour ¼ of the glass with the decoction. adjust the quantity of decoction based on strong you prefer.
- add in 1 tsp of sugar or adjust to your sweetness.
- also pour hot boiling milk, separating cream. adjust the quantity of milk-based on strong you prefer.
- mix to dissolve sugar with the help of davarah or dabarah for an authentic feel. you can also use another glass.
- mix 2 times to get frothy filter coffee. do not over mix as the coffee cools.
- finally, serve south indian filter coffee immediately in the traditional tumbler and dabarah / davarah.

- firstly, use very hot milk and hot water to prepare filter coffee.
- also, adjust the amount of milk and coffee brew based on strong you prefer.
- additionally, you can reuse the coffee powder to prepare a decoction for the second time, however, it will be light.
- finally, madras filter coffee, degree coffee or south indian filter coffee taste great when prepared with thick milk.
