i have posted a lot of eggless cakes recipes which include oven or pressure cooker in a cake mould. this can be tricky for those who do not wish to make cake regularly but attempts once in a while. obviously, they would not wish to purchase these gadgets and like to make it with easily available kitchen gadgets. hence i thought of posting a katori cupcake recipe in cooker. in other words, this cake can be attempted by almost everyone with the basic kitchen tools. initially, i thought of posting a simple vanilla flavoured sponge cake, but chocolate flavoured cake is even better. but you may follow the same procedure and technique for any other cake flavour alternative.

furthermore, some more tips, suggestions and variations to the chocolate cupcake recipe in katori. firstly, for the best cake, you must be using fine quality cocoa powder. i personally recommend to use cadbury baking chocolate powder, but you may use any best quality cocoa powder. secondly, if you are not comfortable using a pressure cooker, you may also use kadai or even deep tawa. however, you may need a good lid to cover it so that heat does not escape. you may also use the preheated oven to prepare the cake at 180 degrees for 30 minutes. lastly, if you wish to make suji cake or rava cake, you may very well use it instead of maida. you may refer my sooji cake recipe for the exact recipe measurements.

Ingredients 

for cake batter:

  • 1 cup milk
  • ½ cup oil
  • 1 tsp vinegar
  • 1 tsp vanilla extract
  • ¾ cup sugar
  • cup maida
  • ½ cup cocoa powder
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt

other ingredients:

  • butter paper
  • oil (for greasing)
  • sand or salt (for pressure cooking)

Instructions
 

  • firstly, in a large bowl take 1 cup milk, ½ cup oil, 1 tsp vinegar, 1 tsp vanilla extract and ¾ cup sugar.
  • whisk and mix well until the sugar dissolves.
  • now place a sieve and add 1¼ cup maida, ½ cup cocoa powder, ½ tsp baking powder, ¼ tsp baking soda and ¼ tsp salt.
  • sieve the flour making sure there are no lumps.
  • mix using cut and fold method making sure there are no lumps.
  • form a smooth silky consistency batter.
  • take small katori or cups and grease with oil. you can alternatively use cupcake moulds.
  • place a butter paper at the bottom to prevent from sticking.
  • pour the batter into katori and tap twice.
  • to bake the cake in cooker, add 1½ cup salt or sand at the bottom of the cooker.
  • place a plate and close the cooker, heat for 10 minutes on medium flame. make sure to not keep the gasket and whistle.
  • after 10 minutes, place the katori into the heated cooker.
  • cover and cook in medium flame for 30 minutes. you can alternatively bake in a preheated oven at 180 degree celcius for 30 minutes.
  • finally, enjoy katori cake or eggless chocolate cup cake in katori once cooled completely.

  • firstly, make sure to use good quality cocoa powder for a rich chocolate flavour.
  • also, the steel cups need to be thick, else there are chances for a cup to burn.
  • additionally, adding salt or sand in the cooker helps to retain heat for a longer time.
