gobi paratha recipe | gobi ka paratha | gobhi paratha recipe with detailed photo and video recipe. a popular stuffed indian paratha recipe which is stuffed with spiced cauliflower. cauliflower paratha is typically served with pickle and yoghurt which is ideal for breakfast and lunch boxes.
i have posted several paratha recipe till now but this simple gobi paratha recipe was long due. i think i overlooked to and i assumed that i had already posted this recipe. moreover i started getting several requests for this exotic indian flat bread recipe. hence i thought to post this recipe quickly on my blog. in this recipe i have used only cauliflower stuffing, but this can be easily extended by adding onions, potatoes and even capsicum. perhaps i would share that recipe soon.
some important tips and suggestion for a perfect and yummy gobhi ka paratha recipe. firstly, the dough needs to be kneaded very smoothly so that the spiced cauliflower is easily stuffed. secondly, and more importantly, apply butter or ghee on paratha while frying after you have roasted the paratha once. this ensures the paratha to cook perfectly otherwise it will turn oily and half cooked. lastly, i have added red chilli powder to gobi stuffing, but additionally green chillies too can be added to make it more spicy.

Ingredients
for stuffing:
- 2 tsp oil
- 1 tsp ginger / adrak (grated)
- 2 cup gobi / cauliflower (grated)
- ½ tsp turmeric / haldi
- ½ tsp kashmiri red chili powder / lal mirch powder
- ½ tsp coriander powder / daniya powder
- ½ tsp cumin powder / jeera powder
- ½ tsp garam masala powder
- ½ tsp aamchur powder / dry mango powder
- salt to taste
- 2 tsp coriander (finely chopped)
for chapathi / paratha dough:
- 1 cup whole wheat flour / atta
- salt to taste
- 1 tsp oil or ghee
- water as required for kneading
- ¼ cup wheat flour for dusting
for roasting paratha:
- ghee or oil as required
Instructions
gobi stuffing recipe:
- firstly, heat oil and saute ginger.
- further add grated cauliflower (gobi) and saute for 5 minutes.
- furthermore add all spices and salt. saute well.
- finally, add coriander leaves and keep aside.
assembling and rolling gobi paratha recipe:
- firstly, pinch a medium sized ball from chapathi dough, roll about 5 inches in diameter.
- place the prepared stuffing in the center.
- take the edge and start pleating bringing to center.
- and press the pleats from center.
- furthermore, sprinkle some flour and roll to of a chapati size.
roasting gobi parata recipe:
- firstly, on a hot tava place the rolled paratha and cook both sides.
- also add oil / ghee and press slightly.
- finally, serve hot gobi parathas with sauce, raita or pickle.
how to make gobi paratha with step by step photo:
gobi stuffing recipe:
- firstly, in a thick bottomed pan heat oil and saute ginger.
- further add grated cauliflower (gobi) and saute.
- saute on medium flame for atleast 3- 5 minutes or till the moisture evaporates completely.
- also saute till the raw smell of gobi disappears completely.
- furthermore add turmeric, red chili powder, coriander powder, cumin powder, garam masala powder, aamchur powder and salt.
- continue to saute on medium flame till the spices turn aromatic.
- finally, add coriander leaves and keep aside.
chapathi / paratha dough recipe:
- firstly, in a large mixing bowl, take 1 cup of wheat flour.
- also add required salt. you can also add a tsp of oil to make dough more soft.
- now add water in batches and knead the dough. use luke warm water to make soft dough.
- add more water if required and knead for 5 minutes.
- knead till the dough is non sticky, soft and smooth.
- furthermore, grease the dough with a tsp of oil to prevent from drying.
- finally, cover with moist cloth and rest for atleast 20 minutes.
assembling and rolling gobi paratha recipe:
- firstly, pinch a medium sized ball dough, roll and flatten it. also dust with some wheat flour.
- further roll it in a circle of about 5 to 5.5 inches in diameter.
- place a tbsp full of prepared gobi stuffing in the center.
- take the edge and start pleating bringing to center.
- also join the pleats together and pinch off the extra part.
- further slightly press and flatten with your hand.
- furthermore, sprinkle some flour and roll to of a chapati size.
roasting gobhi parata recipe:
- firstly, on a hot tawa place the rolled paratha and cook for a minute.
- furthermore, when the base is partly cooked (after a minute), flip the paratha.
- also brush oil / ghee and press slightly. flip again once or twice till both the sides are cooked properly.
- finally, serve hot punjabi gobi parathas with sauce, raita or pickle.
notes:
- firstly, adjust or vary the spices according to your preferences.
- furthermore, for more rich flavour and taste, use generous amount of ghee while roasting.
- also add mashed potato and finely chopped green chili to make aloo gobi paratha.
- finally, punjabi gobi paratha taste great when served hot.
