However, the same halwa can be further extended by adding the edible gum that is popularly known as gond halwa or gond ka sheera.

As I explained earlier, the gond or edible gum is mainly used as an additional ingredient with popular sweets or desserts. As such it does not have its dessert recipe. There isn’t any particular reason for it and hence sky is the limit to explore. Halwa dessert can be an ideal option to try this. The advantage of trying a halwa recipe is the portion control with it. Typically, when it is added to ladoo or barfi, it is generally big, and finishing it can add a lot of calories to our diet. However, you can skip semolina and besan to use just wheat flour if you like atta ka halwa sheera. Secondly, fry the Gond on low to medium flame so that it puffs up. If it does not puff, it may be sticky and stick to teeth while consuming it. Also, if you do not wish to add gond as puffed balls, you may crush it to fine powder. You may need a sharp-edged blender to powder it to the desired consistency.

Ingredients
  

  • ¼ cup gond / edible gum
  • 2 tbsp ghee
  • 2 tbsp almonds, chopped
  • 2 tbsp cashew, chopped
  • 2 tbsp raisins
  • 2 tbsp ghee
  • 1 cup wheat flour
  • 2 tbsp besan
  • ½ cup rava / suji, coarse
  • 2 tbsp ghee
  • cup jaggery
  • 3 cup water
  • ½ tsp cardamom powder
  • ½ tsp ginger powder
  • ½ tsp pepper powder
  • ½ cup coconut, shredded

Instructions
 

  • Firstly, crush the ¼ cup gond into small pieces and keep it aside.
  • In a large pan heat 2 tbsp ghee, roast 2 tbsp almonds, 2 tbsp cashew, and 2 tbsp raisins.
  • Roast on low flame until the nuts turn golden brown and keep aside.
  • In the same pan add 2 tbsp ghee and fry the gond.
  • Fry on low flame until the gond puffs up. keep aside.
  • In the same ghee add 1 cup wheat flour, 2 tbsp besan, and ½ cup rava.
  • Continue to roast on low flame until the flour turns aromatic.
  • You can also add ghee as required and roast until the flour turns golden brown and the ghee separates from the sides. keep aside.
  • In a large kadai heat 1½ cup jaggery, 3 cup water, and mix well.
  • Boil for 1 minute, do not over boil else the jaggery syrup will attain string consistency.
  • Once the water comes to a boil, add in atta rava flour and mix well.
  • Stir continuously, making sure there are no lumps and the flour absorbs all the water.
  • Once the flour absorbs the water add in ½ tsp cardamom powder, ½ tsp ginger powder, ½ tsp pepper powder, and roasted nuts and gond.
  • Mix well making sure everything is well combined.
  • Furthermore, add ½ cup of coconut and mix gently.
  • Finally, enjoy Gond Halwa Recipe or store it in an airtight container for up to a week when refrigerated.
