Dosa recipes are traditional South Indian breakfast recipes prepared with a simple combination of rice and urad dal. However, the dosa has seen so many variations and alterations to this simple recipe, thus can be done with any ingredients. One such extremely simple and healthy dosa recipe is the sprouts dosa recipe known for its rich protein source.

As I was explaining earlier, this recipe is very similar to the popular Andhra special pesarattu recipe. Basically, the pesarattu is made with mung beans which are also rich in protein, but this recipe requires sprouts bean making it extra special. Well if you consider the sprouting process, it may require 2-3 days depending upon the climate. However, if you have it ready, preparing the dosa is an instant method. This basically, does not require any additional soaking, fermenting, and more importantly just one ingredient. You just need to ground it like a paste and spread it. In addition, you would not face the hassle of sticking to the pan as it should easily come out once fried. Once prepared, I would recommend serving it with a spicy chutney like tomato or onion, but you choose as per your preference.

Firstly, in this recipe, I have specifically used fresh mung bean sprouts, but you may add other sprouts too. Perhaps, sprouts from peas, lentils, chickpeas, kidney beans, and alfalfa green sprouts. Secondly, similar to the pesarattu dosa, the sprouts dosa can also be served with upma. Typically the pesarattu dosa is stuffed with upma like masala dosa before it is served. However, the combination may not be termed a healthy weight-loss recipe. Lastly, preparing the sprouts at home can be time-consuming and requires a lot of patience and attention. But if you are able to get them from your local grocery shop, you should be good to use them.

Ingredients
  

  • 1 cup moong beans
  • 1 bunch coriander
  • 1 inch ginger, chopped
  • 3 chilli
  • 1 tsp cumin
  • ½ cup water
  • ½ tsp salt
  • olive oil, for roasting

Instructions
 

  • firstly, soak 1 cup moong beans overnight and tie in a cloth to get sprouts.
  • transfer the sprouted moong beans into the mixer jar.
  • add 1 bunch of coriander, 1 inch ginger, 3 chilli, 1 tsp cumin, and half cup water.
  • grind to smooth paste adding water as required.
  • transfer the moong batter to the large bowl.
  • add half a tsp salt and mix well.
  • heat the tawa and spread the dosa batter as thin as possible.
  • sprinkle some chopped onions and half tsp olive oil.
  • cook until the dosa turns golden brown.
  • flip over and cook well.
  • finally, enjoy sprouts dosa with spicy chutney.
