i am a huge fan of sandwich recipes. it is one of the must dish i make often for my weekdays breakfast. i like it because it is purpose-based, quick, easy, filling and to the point recipe. however, the street style is completely different from the simple morning breakfast sandwich recipes. it is loaded with lip-smacking ingredients like cheese, chutneys, spicy and tangy sauce and many more. basically it is a once of the dish and you cannot have it on a regular basis. especially it is loaded with cheese which would excite your taste buds, but may not for your stomach. in this recipe, i have added grated cheddar cheese for stuffing and grated mozzarella cheese on top of the grilled sandwich.
furthermore, some more tips, suggestions and variations to the grilled cheese pizza sandwich recipe. firstly, i would heavily recommend using large white sandwich bread slices for this recipe. avoid using small-sized bread and certainly no for multigrain or wheat bread. secondly, i have made this recipe with 3 layered sandwiches and it can be too much for those with less appetite. hence you can skip the top layer and just go with the bottom layer. lastly, i have used kadai to bake the cheese on the top grilled sandwich. you may use a traditional oven for the same purpose which is less hassle.

Ingredients
for stuffing:
- 1 onion, finely chopped
- 3 tbsp sweet corn
- 1 tomato, finely chopped
- ½ capsicum, finely chopped
- 3 tbsp paneer, cubes
- ¼ tsp pepper pwoder
- ½ tsp salt
- ¼ cup mayonnaise, eggless
- 2 tbsp tomato sauce
- 1 tsp chilli sauce
- 1 tsp green chutney
- ¼ cup cheese, grated
for one sandwich:
- 3 slice bread, white or brown
- butter, to spread
- 3 tbsp tomato sauce
- 1 tsp green chutney
- 8 slice cucumber
- 4 slice tomato
- 2 tbsp potato / aloo, boiled & mashed
- pinch chaat masala
- ½ tsp chilli sauce
- ¼ tsp chilli flakes
- ¼ tsp mixed herbs
- 2 tbsp pizza cheese, grated
Instructions
- firstly, in a large bowl take 1 onion, 3 tbsp sweet corn, 1 tomato, ½ capsicum and 3 tbsp paneer.
- also, add ¼ tsp pepper powder, ½ tsp salt and mix well.
- now add ¼ cup mayonnaise, 2 tbsp tomato sauce, 1 tsp chilli sauce, 1 tsp green chutney and ¼ cup cheese.
- mix well making sure everything is well combined. stuffing is ready.
- now take 3 slices of bread and spread butter.
- on one of the slice spread 1 tbsp tomato sauce and on another 1 tsp green chutney.
- spread 2 tbsp of prepared stuffing on one slice of bread.
- cover with a slice of bread which is buttered.
- further place, 8 slice cucumber, 4 slice tomato, 2 tbsp potato, pinch chaat masala and 1 tbsp tomato sauce.
- cover with a bread slice, in which green chutney is spreaded.
- press gently, butter the sandwich and grill to a golden brown.
- now place the sandwich in kadai. make sure to place a plate or stand in the bottom to prevent from burning.
- spread 1 tbsp tomato sauce, ½ tsp chilli sauce, ¼ tsp chilli flakes and ¼ tsp mixed herbs.
- spread uniformly, you can alternatively use pizza sauce here.
- top with 2 tbsp of grated pizza cheese.
- cover and cook for 5 minutes or until cheese melts.
- finally, slice half and enjoy grilled cheese pizza sandwich with potato chips.
