as i was explaining, dosa recipes are perhaps one of the important recipe categories for most of us. there are hundreds of dosa varieties in the offering if not thousands. yet we do still experiment and try to innovate the dosa recipe with the same set of ingredients or by adding few more simple ingredients. this instant stuffed dosa pancake is one such simple and easy innovative recipe which does not only taste to consume but more importantly do not require any side with it. the spicy vegetable masala stuffed inside the dosa makes it a complete meal. you may perhaps prepare and pack it for lunch box or tiffin boxes, especially for kids. i generally make it with my leftover masala dosa batter but you may very well follow this instant dosa batter to a simple dosa or this stuffed dosa.

furthermore, some more additional tips, suggestions and variants to the instant stuffed mini bun dosa. firstly, the stuffed dosa is best prepared in a mini or small pan that holds the batter to shape it. you may also use the traditional dosa pan but may not get the same thickness as shown in this video. secondly, due to the thickness of the dosa, it has to be cooked on a slow flame for a minimum of 2 minutes on each side. this ensures that the dosa is fully and evenly cooked. lastly, in this video, i have shown and used mixed vegetable masala stuffing which should be ideal for stuffing. but you may also use leftover aloo masala or any dry sabji for stuffing.

Ingredients
  

for aloo stuffing:

  • 2 tsp oil
  • 1 tsp mustard
  • ½ tsp cumin
  • pinch hing
  • 1 chilli, finely chopped
  • 1 onion, finely chopped
  • ½ tsp ginger paste
  • ½ tsp turmeric
  • ½ tsp salt
  • 1 carrot, finely chopped
  • 2 tbsp sweet corn
  • 3 tbsp peas
  • ½ capsicum, finely chopped
  • 3 potato, boiled & mashed
  • 2 tbsp coriander, finely chopped
  • ½ lemon juice

for instant bun dosa batter:

  • 1 cup rava / semolina / suji, coarse
  • 1 cup poha / avalakki, thin
  • 2 tbsp rice flour
  • ½ tsp salt
  • ½ cup curd
  • water, for batter
  • ¼ tsp baking soda

Instructions
 

aloo stuffing preparation:

  • firstly, in a large kadai heat 2 tsp oil. add 1 tsp mustard, ½ tsp cumin, pinch hing and 1 chilli. splutter the tempering.
  • now add 1 onion and saute until the onion shrink slightly.
  • further, add ½ tsp turmeric and ½ tsp salt. saute until the spices turn aromatic.
  • add 1 carrot, 2 tbsp sweet corn, 3 tbsp peas and saute for a minute.
  • also, add 3 potatoes and mix well combining well.
  • now add 2 tbsp coriander and ½ lemon juice. mix well.
  • finally, aloo stuffing is ready. keep aside.

instant bun dosa batter:

  • firstly, in a mixi jar take 1 cup rava and 1 cup poha.
  • blend to a fine powder without adding water.
  • transfer the rava and suji powder into a large bowl. add 2 tbsp rice flour, ½ tsp salt and mix well.
  • also, add ½ cup curd and water. mix well forming a smooth batter.
  • rest the batter for 15 minutes or until the batter is well soaked.
  • now add ¼ tsp baking soda and mix gently.
  • take a small pan and grease well with oil.
  • pour the batter over the pan.
  • place the aloo stuffing in the centre and press gently.
  • now pour the dosa batter and cover the aloo masala.
  • cover the pan and simmer for 2 minutes or until the base is cooked.
  • flip over and cook both sides.
  • finally, enjoy aloo stuffed dosa with green chutney.
