i, personally a huge fan of kathi roll or street style frankies. particularly the mushroom or paneer frankie is my all-time favourite street food snack. but you crave something different and some innovative in your favourite snack recipe too. it does apply to my favourite frankie too. well, there isn’t any innovation with the stuffing, but the wrap is taken to the whole next level. i am assuming that everyone prefers layered or laccha paratha when compared to just roti or chapati. therefore, i have used layered paratha for the wrap and followed the same aloo stuffing process. moreover, the lachha paratha is prepared with just wheat flour and a topping of spice and herbs. thus making a lip-smacking and mouth-watering snack recipe.
furthermore, i would also like to add some additional tips, suggestions and variants to the laccha paratha veg frankie recipe. firstly, i totally agree with the point that preparing stuffing and wrap can be tiring. therefore, you could either prepare the stuffing the previous day and prepare the wrap the next day. moreover, you can also use store-bought lachha paratha if you wish to. secondly, while preparing the wrap, i have used only wheat flour, but you can also use plain flour. you may use a 1:1 ratio or you can use just plain flour to prepare the wrap. lastly, due to the use of wheat flour, it may start cracking and may have gaps while folding. hence it is recommended to start the wrap when the paratha is still warm and hot.

for lachha paratha:
- 3 cup wheat flour
- ½ tsp chilli flakes
- ½ tsp salt
- 2 tsp oil
- water, for kneading
- ghee, for spreading
- 2 tsp chaat masala
- oil, for roasting
for aloo kabab:
- 4 potato / aloo, boiled & grated
- ½ onion, finely chopped
- 2 chilli, finely chopped
- ½ tsp ginger paste
- ½ tsp chilli powder
- ¼ tsp turmeric
- ½ tsp cumin powder
- ½ tsp garam masala
- ½ tsp aamchur
- ½ tsp chaat masala
- ½ tsp salt
- 2 tbsp coriander, finely chopped
- oil, for roasting
for chilli vinegar:
- 1 cup vinegar
- 2 chilli, finely chopped
for frankie:
Instructions
how to make lachha paratha:
- firstly, in a large bowl take 3 cup wheat flour, ½ tsp chilli flakes, ½ tsp salt and 2 tsp oil.
- mix well making sure the flour is moist.
- now add water and start to knead the dough.
- knead to a smooth and soft dough adding water as required.
- grease the dough with oil, cover and rest for 20 minutes.
- knead the dough slightly and pinch a small ball sized dough and roll.
- dust wheat flour and roll to thin thickness.
- spread a tsp of ghee over the rolled roti.
- also, sprinkle chaat masala, wheat flour and now fold zig-zag way and roll spiral.
- sprinkle wheat flour and roll gently.
- roll to slightly thick thickness sprinkling wheat flour if required.
- now cook on hot tawa keeping the flame on medium.
- roast both sides spreading oil on both sides.
- cook until the paratha turns golden brown and layers separate.
how to make aloo kabab:
- firstly, in a large bowl take 4 potato ½ onion, 2 chilli and ½ tsp ginger paste.
- also add ½ tsp chilli powder, ¼ tsp turmeric, ½ tsp cumin powder, ½ tsp garam masala, ½ tsp aamchur, ½ tsp chaat masala and ½ tsp salt.
- now add 2 tbsp coriander and mix well forming a soft dough.
- to prepare kabab, take a ball sized mixture and stick it to the stick.
- roast on medium flame greasing oil as required.
- roast both sides until it turns crisp.
how to assemble laccha paratha roll:
- take the lachha paratha and spread 1 tsp green chutney.
- place prepared aloo kabab in centre.
- top with 3 tbsp salad, 1 tsp chilli vinegar, 1 tsp tomato sauce and 1 tsp green chutney. to prepare chilli vinegar, in a bowl take 1 cup vinegar and add 2 chilli.
- roll tight making sure everything is intact.
- finally, enjoy lachha paratha veg roll with more sauce if required.
