Basically, it is added to these curries to give them thickness, creaminess, and a hint of tanginess. some even add chickpea flour or besan with curd, but i feel it would lower the spice heat and hence skipped it. In addition, I have added kadai masala, which will give this gravy an extra zing.

- 1 tsp cumin
- ¼ tsp pepper
- 3 cloves
- 2 pods cardamom
- ½ inch cinnamon
- ½ tsp fennel / saunf
for marination:
- 20 cubes paneer
- ½ tsp chilli powder
- ¼ tsp turmeric
- ¼ tsp garam masala
- 1 tsp ginger garlic paste

- 1 tbsp ghee / clarified butter
for curry:
- 2 tbsp ghee / clarified butter
- 2 tbsp oil
- 1 bay leaf
- 2 pods cardamom
- 1 inch cinnamon
- 2 cloves

- 1 onion, finely chopped
- 1 tsp ginger garlic paste
- ¼ tsp turmeric
- 1 tsp chilli powder
