Furthermore, some tips, suggestions, and variations for a perfect paneer paratha recipe. Firstly, prepare a moist dough and a soft dough, that can be easily shaped and rolled into flatbread. The dough should be exactly similar to chapati or roti dough that can easily cover the spiced paneer crumbles in it. Secondly, it is recommended to refrigerate the dough for a few hours. Perhaps even refrigerating for half an hour would make a big difference, particularly in shaping and rolling the paratha. Lastly, grate the paneer finely to small chunks. - Paneer – Use fresh moist and preferably homemade paneer for this paratha. Store-bought paneer comes adulterated and can be hard to crumble and eventually for stuffing.
- Spice Mixture – The basic spice mixture used for this recipe is chilli powder, garam masala, and amchur powder. However, the spice mixture can further be increased, and depending upon taste buds, you can add kasuri methi, chaat masala, etc.
- Moist Dough – The dough has to be soft and moist so that it can be easily shaped and pleated. There are many different pleating and stuffing techniques, but having moist and soft dough helps to pleat in any shape.
- Cooking Method – Use a preheated griddle or tawa to roast the rolled and stuffed paratha. If the tawa is not heated properly, it may stick to the tawa and cannot be easily flipped.
- Accompaniments – The paratha does not require any mandatory side dish, yet can be served with basic to fancy accompaniments. The most common is flavored yogurt or raita, but it can also be served with a range of pickles or any type of curries.

Ingredients
for Paneer Stuffing:
- 2 cup paneer, grated
- ½ tsp cumin powder
- 1 tsp aamchur
- ½ tsp chilli powder
- 1 inch ginger, grated
- 2 chilli, finely chopped
- 2 tbsp coriander, finely chopped
- ½ tsp salt
for dough:
- 2 cup wheat flour
- ½ tsp salt
- ½ tsp ajwain / carom seeds
- water, for kneading
Instructions
How to make paneer stuffing for paratha:
- Firstly, in a large bowl take 2 cup paneer, ½ tsp cumin powder, 1 tsp aamchur, ½ tsp chilli powder, 1 inch ginger, grated, 2 chilli, finely chopped, 2 tbsp coriander, and ½ tsp salt.
- Mix well making sure everything is well combined. Paneer stuffing is ready, keep it aside.
How to make dough for paratha:
- Firstly, in a large bowl take 2 cup of wheat flour ½ tsp salt and ½ tsp ajwain. Mix well.
- Add water as required and start to knead.
- Knead to a smooth and soft dough adding water as required.
- Grease oil and rest for 20 minutes.
How to make Paneer Paratha:
- After the dough has rested for 20 minutes, knead slightly.
- Now pinch a ball-sized dough and roll about 4 inches in diameter.
- Place a ball-sized prepared paneer stuffing in the centre.
- Take the edge and start pleating bringing it to the centre.
- Also, join the pleats together and secure tight pinching off excess dough.
- Sprinkle some wheat flour and roll slightly thick.
- On a hot tawa place the rolled paratha and cook for a minute.
- Furthermore, flip the paratha when the base is partly cooked (after a minute).
- Also, brush oil/ghee and press slightly. Flip again once or twice till both sides are cooked properly.
- Finally, serve hot Paneer paratha with sauce, raita or pickle.
