i had posted gobi pepper fry previous, to which i received a lot of appreciation. well, to be honest, it is not a complex or sophisticated recipe, and i never expected such an overwhelming response. hence i explored my other options with pepper fry and paneer was obviously my first option. in other words, this recipe is exactly the same version as gobi pepper with gobi replaced with paneer. when compared to the gobi variant, the paneer recipe is more filling for the obvious reason of paneer. but the major advantage of this recipe is the nutrient it supplies with it. we all know paneer is rich in protien and hence when compared to gobi it is loaded with nutrients. hence if you are in confusion about this recipe, and especially for fussy eaters like kids, you should opt for paneer pepper dry.
furthermore, some more additional tips, suggestions and variants to the paneer pepper masala recipe. firstly, the paneer is the key ingredient for this recipe and hence has to be fresh and juicy. i have used the homemade paneer for this recipe, but you can use store-bought for quick turnaround. but make sure it is not hard and is not due to expire. secondly, if you wish to make it with more gravy, then you add cornstarch with water just before mixing the fried paneer cubes. adjust the consistency with the cornstarch mixture as per your preference. lastly, if you wish to make other types of pepper dishes, you may replace paneer cubes with other vegetables or meat. the other vegetable option includes mushroom, baby corn, potato and even tofu.

Ingredients
for crispy paneer:
- ¾ cup maida
- ¾ cup corn flour
- ½ tsp turmeric
- ½ tsp pepper powder
- ½ tsp salt
- water, for batter
- 200 grams paneer, chopped
for sauce:
- 2 tbsp oil
- 1 tsp cumin
- ½ tsp fennel
- pinch hing
- few curry leaves
- 4 garlic, crushed
- 1 inch ginger, chopped
- ½ onion, finely chopped
- ½ capsicum, finely chopped
- ¼ tsp turmeric
- ½ tsp cumin powder
- ½ tsp coriander powder
- ½ tsp garam masala
- ½ tsp pepper powder
- ½ tsp salt
- 2 tbsp tomato sauce
- 2 tbsp water
- 2 tbsp coriander, finely chopped
Instructions
- firstly, in a bowl take ¾ cup maida, ¾ cup corn flour, ½ tsp turmeric, ½ tsp pepper powder and ½ tsp salt.
- add water and prepare a smooth lump-free batter.
- dip paneer cubes in batter and coat uniformly.
- deep fry in hot oil, keeping the flame on medium.
- fry until the paneer turns golden brown and crisp.
- drain off the paneer and keep aside.
- in a large wok, heat 2 tbsp oil. add 1 tsp cumin, ½ tsp fennel, pinch hing and few curry leaves. saute until the spices turn aromatic.
- add 4 garlic, 1 inch ginger, ½ onion and saute until the onions turn translucent.
- also, add ½ capsicum and saute slightly.
- keeping the flame on low and add ¼ tsp turmeric, ½ tsp cumin powder, ½ tsp coriander powder, ½ tsp garam masala, ½ tsp pepper powder and ½ tsp salt.
- saute until the spices turn aromatic.
- further, add 2 tbsp tomato sauce and cook on high flame. add 2 tbsp water and adjust the consistency of the sauce.
- add in fried paneer and mix well coating sauce uniformly.
- finally, add 2 tbsp coriander, lemon and enjoy crispy paneer pepper fry.

- firstly, to make the paneer more crispy, you can use a 1:1 ratio of maida and cornflour.
- also, doubled frying the paneer will keep them crunchy for a longer time.
- additionally, adjust the pepper based on your spice level.
