as i previously mentioned, the recipe is simple and ordinary and does not have any complex ingredients in it. yet such a tasty and healthy meal or sandwich recipe made in minutes. as a matter of fact, i had some leftover spinach leaves in my fridge and i was wondering how to finish it. to add, i also had some unattended bread slices and hence i thought of sharing some sandwich recipe with spinach leaves. obviously, i wanted to experiment it with some other veggies and sweet corn was my easy choice. generally, i add sweet corns to most of my sandwich recipe and hence i was sure that corn and spinach would be an ideal stuffing for this sandwich recipe too.
the spinach corn sandwich recipe hardly takes minutes to prepare, yet some tips and suggestions. spinach sandwich tastes great with white sandwich bread slices and i would recommend heavily to use the same. you can use brown bread or multi-grain bread but you would not get the same taste as former. secondly, i have grilled the sandwich on tawa, but this can also be done with a sandwich grill or even sandwich toaster. lastly serve these sandwich immediately once it has been grilled on tawa. otherwise, it may turn soggy and may not be pleasant to be served later.

Ingredients
- 1 tsp butter
- 2 tbsp onion, finely chopped
- 1 cup palak / spinach, finely chopped
- ½ cup corn
- ½ tsp mixed herbs
- ½ tsp chilli flakes
- ¼ tsp pepper, crushed
- ¼ tsp salt
- 4 slice bread, white / brown
- 4 tsp green chutney
- butter for toasting
Instructions
- firstly, in a large tawa heat 1 tsp butter and saute 2 tbsp onion.
- also, add 1 cup palak and saute for 2 minutes or until palak shrinks.
- now add ½ cup corn and saute until corn is cooked well.
- further add ½ tsp mixed herbs, ½ tsp chilli flakes, ¼ tsp pepper and ¼ tsp salt.
- saute and mix well. the mixture is ready, keep aside.
- now take 2 slices of bread and spread 1 tsp green chutney on each slice of bread.
- spread 2 tbsp of prepared palak corn mixture over bread slice.
- further place a slice of cheese.
- cover with another slice of bread and press gently.
- roast the sandwich with butter on both sides.
- finally, cut the bread in half and serve spinach corn sandwich.
how to make corn spinach sandwich with step by step photo:
