suji ka nashta recipe | suji ka nasta | eggless rava omelette recipe with detailed photo and video recipe. a healthy and tasty kids friendly recipe made with coarse semolina and choice of vegetables. the recipe is very similar to the egg-based omelette or mung beans based moonglet and hence known as semolina omelette or romelette recipe. the recipe can be easily served as it is without any side dish but tastes great when served with choice of spicy chutney or sauce.
i recently had posted the moonglet or the mung bean-based omelette recipe and many had liked it. as a consequence, i got a lot of requests to post other variations to it. hence i thought of sharing a semolina based variations. in other words, i have shared the exact same way as my previous moonglet recipe. i have just replaced the mung beans with semolina and prepared it in the same pan and same technique. moreover, there is no fermentation and no soaking as well which reduces the preparation and cooking time. in addition to it there is a lot of vegetables added a lot and hence makes an ideal healthy snack recipe for kids.
furthermore, some more additional tips, suggestions and variations to the suji ka nasta recipe. firstly, i would heavily recommend using coarse rava or bombay rava for this recipe. the rava should not be either thick or thin so that it becomes easy to fry in pan. secondly, i have added eno fruit salt which helps to stimulate the fermentation process. i personally recommend to use the same and avoid baking soda for this recipe as it may react to form a pink colour omelette. lastly, adding different types of vegetables is your choice and you can experiment as you wish. however, you may need to finely chop it so that it gets cooked easily.

Ingredients
for suji batter:
- 1 cup rava / semolina / suji, coarse
- ½ cup curd
- ½ tsp salt
- ¾ cup water
- ½ carrot, finely chopped
- 2 tbsp sweet corn
- ½ capsicum, finely chopped
- 5 beans, finely chopped
- 3 tbsp onion, finely chopped
- 2 tbsp coriander, finely chopped
- ½ tsp chilli flakes
for roasting:
- ½ tsp eno / fruit salt
- 2 tsp oil
- 1 tsp butter
- 2 tbsp coriander, finely chopped
Instructions
- firstly, in a large bowl take 1 cup rava, ½ cup curd and ½ tsp salt.
- mix well making sure everything is well combined.
- now add ¾ cup water and mix forming a lump free batter.
- rest the batter for 10 minutes.
- further add ½ carrot, 2 tbsp sweet corn, ½ capsicum, 5 beans, 3 tbsp onion, 2 tbsp coriander and ½ tsp chilli flakes.
- mix well forming a smooth batter.
- now heat a pan and spread 2 tsp oil.
- once the pan is hot, add ½ tsp eno fruit salt, 2 tbsp water to the batter and mix gently.
- once the batter turns frothy, pour onto the hot pan.
- cover and simmer for 2 minutes or until the base are cooked well.
- now flip over and press gently.
- make a good slit in the centre and 1 tsp butter, 2 tbsp coriander in the centre.
- simmer for a minute or until the is cooked completely.
- finally, enjoy rava omelette or suji ka nasta with tomato sauce.
how to make suji ka nasta with step by step photo:

- firstly, add vegetables of your choice to make the omelette nutritious.
- also, add eno just before pouring onto the pan. else it will not be spongy.
- additionally, add a generous amount of butter gives a nice flavour.
- finally, suji nasta recipe or rava omelette tastes great when prepared slightly spicy.
